Banana Bread Cookies Recipe

Ingredients Needed
- 120g/4ozs butter for browning or 80g/2.8oz melted browned butter
- 50g/1.7oz butter, cold and cubed
- 225g/8oz light brown sugar
- 1 medium banana, very ripe (60g/2oz banana without skin)
- 1 egg yolk
- 1 teaspoon vanilla
- 200g/7oz cake flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon bicarb
- 1/4 teaspoon fine salt
- 120g/4oz chocolate chips plus 30g/1oz extra for decorating
- 1/2 cup banana chips
Step-By-Step Instructions
Step 1 BROWN BUTTER - Brown the butter by placing in a medium sized saucepan on medium heat. Allow to bubble up and within around 5 minutes, it should start to smell nutty and become foamy and a brown patch will appear in the foam. Remove from heat immediately. Strain out 80g/2.8oz of the melted butter.
Step 2 BEAT - Place melted browned butter with the cold butter cubes and allow to cool off for 5-10 minutes until lukewarm. Add the brown sugar and beat for 2.5-3 minutes or until pale and fluffy.
Step 3 MASH - Mash the banana with a fork and add this and the yolk and vanilla to the batter and beat for 30 seconds or until combined. Don't worry if there are tiny bits of banana.
Step 4 FLOUR - In a bowl whisk the cake flour, bicarb, salt and cinnamon together and then add in by hand to the batter stirring until almost all combined. Lastly stir in the 120g/4oz of chocolate chips.
Step 5 BAKE - Line 3 trays with parchment and preheat oven to 180C/350F conventional or 160C/320F fan forced. Using a small 30g/1oz ice cream scoop, scoop out batter placing 6 per tray allowing for a 2 inch spread. Top with a banana chip and press 3-4 chocolate chips into the cookies on top. Bake for 12-14 minutes or until golden around the edges. Cool on the tray. These cookies will become softer and chewier on the second day.
Personal Note
I mentioned that I first used fresh banana to decorate these as Mr NQN had eaten all the banana chips. I didn't have any fresh banana so I asked Mr NQN if he could ask any neighbours if they had bananas. A few minutes later Mr NQN walked out the back with a cheeky grin on his face. Our next door neighbour Brian was reaching across the back fence with a banana!
And then he asked if we wanted any avocadoes as they have an avocado tree at their holiday house and often come back from there with lots of avocadoes.
We took the produce and promised him that the banana would return in a form of a cookie, these banana bread chocolate chip cookies. The next day I received my supermarket delivery with banana chips in it but kept Mr NQN's promise and delivered a dozen cookies to Brian!
