  • 6 large potatoes (220-250g/7.7-8.8oz each)
  • 50ml/1.7fl oz avocado oil
  • 1.5-2 teaspoons fine salt
  • 60g/2oz butter, cut into 6 squares

Step 1a OVEN - Preheat oven to 220C/428F fan forced or 240C/464F conventional (or maximum temperature). Scrub the potatoes (6 large potatoes, 220-250g/7.7-8.8oz each) well so that no dirt remains. Take a fork and poke the potato 4 times, turn over and poke the other side 4 times. Brush with oil (50ml/1.7fl oz) and sprinkle with salt (1.5-2 teaspoons) and bake for 60-80 minutes. When internal temperature at the centre reaches 93C/200F it is ready.

Step 1b MICROWAVE/OVEN QUICK- Preheat oven to 220C/428F fan forced or 240C/464F conventional (or maximum temperature). Scrub the potatoes (6 large potatoes, 220-250g/7.7-8.8oz each) well so that no dirt remains. Take a fork and poke the potato 4 times, turn over and poke the other side 4 times. Brush with oil and sprinkle with salt (1.5-2 teaspoons) and place 6 potatoes on a plate. Microwave for 12 minutes. Remove from microwave and brush again with oil and then bake for 30-40 minutes. When internal temperature at the centre reaches 83C/200F it is ready. Note: for 1-3 potatoes, microwave for 6 minutes. For 4-6 potatoes microwave for 12 minutes. Brush again with oil and then bake in the oven for 30-40 minutes. When internal temperature at the centre reaches 93C/200F it is ready.

Step 2 FLUFF - Immediately cut an X or slit down the centre and squeeze the sides towards the centre of the potato to fluff up and mash the centre. You can also fluff the inside with fork. Insert square of butter (10g/0.3oz butter per potato) and serve with a range of toppings or as is.

Personal Note

I decided to have a baked potato party for Mr. NQN and his brother Manu's birthday party. Their birthdays fall within a week of each other, so they usually have a joint birthday.

I laid out all the spreads and they also brought some toppings along. But you know the Elliott's are kind of wild and unpredictable? Well predictably they did turn up late but for reasons that I could never have guessed.

His sister Araluen texted me if I minded if she brought her new chicken along. She had just picked up a second chicken to go along with her existing chicken. She turned up with Minnie in a cardboard box.

Teddy and Milo were so fascinated with her. Milo in particular is fascinated by birds and has a strong prey drive towards them so we had to make sure that he wasn't able to get too close. Minnie stayed in the front office behind a closed door in a box just to decompress a bit. But Araluen was very excited to share her with us and we all wanted to meet her so she took her outside and introduced her to us while the dogs stayed inside. I did get a peek of her through the box holes and they were fascinated. They never barked at her or anything. They just basically wanted to sniff her!
