S'mores Brownies Recipe

For Base

  • 6 Graham crackers

For Brownies

  • 250g/8.8oz dark chocolate chips
  • 140g/4.9oz butter, cubed
  • 180g/6oz caster or superfine sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 125g/4oz cake flour
  • 60g/2oz cocoa powder
  • 1.5 teaspoons baking powder
  • 180g/6oz milk chocolate chips

For Topping

  • 200g/7oz white marshmallows
  • Pieces of chocolate bar

Step-By-Step Instructions

Step 1 PREP - Line the base and sides of a 20x20cm or 8x8inch square baking tin but cut the side parchment pieces as separate strips (so you can remove these before grilling). Preheat oven to 160C/320F fan forced or 180C/350F conventional. Line the tray with Graham crackers (6 Graham crackers) - they should fit snugly.

Step 2 BROWNIE - Melt the dark chocolate (250g/8.8oz dark chocolate chips) and butter (140g/4.9oz butter) in a microwave on 70% power in 60 second increments until melted. Mix to create a smooth mixture. Mix in sugar (180g/6oz caster or superfine sugar) and vanilla (2 teaspoons vanilla), then add the eggs (2 eggs) and stir to mix. Don't worry if it is grainy. Sift in the cake flour (125g/4oz cake flour), cocoa powder (60g/2oz cocoa powder) and baking powder (1.5 teaspoons baking powder) and mix to combine but do not overmix. Stir in the milk chocolate chips (180g/6oz milk chocolate chips) and then spread this mixture over the Graham crackers. Bake for 30 minutes or until set. Cool for 20 minutes to set. Remove the parchment side pieces.

Step 3 MARSHMALLOW - Place marshmallows (200g/7oz white marshmallows) on top (if using super large ones, cut these in half). Preheat grill to medium and make sure that the top of the marshmallows won't touch the grill. Gently grill the marshmallows, this should take between 2-5 minutes. You can also do this using a culinary blowtorch. Place chocolate on top of marshmallow while still warm and press down.

Personal Note

These brownies while simple in concept presented problems with the marshmallow component. I know that people love easy recipes so I decided to design these with bought marshmallows instead of making my own.

And that's where the problems started.

I had one big bag of marshmallows but half were white and half were pink which is a pet hate of mine because I really don't like pink marshmallows. And there simply weren't enough white ones to cover the brownie tin. I was annoyed by this so I took off my apron and drove to the shop and looked for another packet but they didn't have that same brand.

I ended up buying 3 packs of Pascalls marshmallows. These are not my favourite marshmallow but they were 50% off and I figured that I would need 3 packets to get enough white marshmallows so instead of $15 worth of marshmallows, it was $7.50.

When I got home I knew I had made a terrible mistake. These marshmallows are absolutely caked in cornflour so they have little to no flavour and they toasted up horribly. It was mainly because the top was all cornflour.

"I have to go to the shops again!" I said to Mr NQN grabbing my keys. I bought two packs of white vanilla marshmallows not coated in tonnes of cornflour. These toasted up nicely but I will have to say that buying so many packets marshmallows would have not been what I wanted to spend my money on and I should have perhaps made my own haha!
