Green Grass Scones

Preparation time: 10 minutes
Cooking time: 15 minutes
Makes 10-12 scones
- 2 cups self-raising flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 2 cups rocket (arugula), roughly chopped
- 1.5 cups grated tasty cheese
- 150ml/5ozs. cream
- 150ml /5ozs.soda water
- 2 tablespoons milk
Step 1 - Preheat oven to 200C/400F and line a baking sheet with parchment. Whisk the flour, baking powder, salt and cayenne pepper in a large bowl. Add the rocket and cheese and stir to coat in the flour. Measure the cream and soda water in a jug and add to the scone mixture. Mix until just combined.
Step 2 - Lightly flour a surface and shape the dough into a rectangle. Cut into squares of your desired size (not too small though, I find larger scones best). Place onto the baking tray and brush with milk. Bake for 15-20 minutes. Serve warm from the oven with butter or avocado.
