Sheet Pan Chicken Fajita Recipe

Ingredients Needed
- 3 capsicums (around 600g/1.3lbs)
- 2 medium onions, peeled (around 280g/10oz)
- 1kg/2.2lbs chicken thigh or breast, boneless, skinless
- 2 tablespoons taco seasoning mix (see recipe below)
- 3 tablespoons soy sauce
- 1/2 teaspoon sugar
- Extra virgin olive oil for drizzling
- Sour cream, fresh coriander and lime wedges for serving
- 8-10 small flour or corn tortillas
Step-By-Step Instructions
Step 1 - Preheat oven to 180C/350F fan forced or 200C/400F conventional. Slice the capsicum into strips and the onions into thin wedges or half moons. Slice chicken into strips. In a large bowl mix the taco seasoning mix with the soy sauce and sugar and toss chicken in this mixture. Place chicken and vegetables on a large baking sheet and drizzle with a teaspoon or so of oil. Cover with foil and bake for 20 minutes. Remove foil and bake for another 20-25 minutes. Season with salt and pepper to taste.
Step 2 - To warm up flour tortillas steam or spray with water and microwave them for 20 seconds per tortilla. Keep them warm in a tea towel or a tortilla warmer. Spread tortillas with sour cream and add the chicken and vegetables.
Taco Spice Mix
- 2 teaspoons smoked paprika
- 1.5 teaspoons ground cumin
- 1.5 teaspoons Tajin seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Step 1 - Mix all ingredients together in a bowl.
Personal Note
Teddy is my little shadow whenever I slice up the chicken for these fajitas. Milo is allergic to chicken and somehow he seems to know that the chicken isn't for him so he doesn't always come when he smells this being prepared which honestly makes me a bit sad because I know that he has FOMO about everything.
My sister Blythe told me that my mother loves getting videos of Teddy and Milo and suggested that I send more videos. I said that I would so I've been sending her videos every second day. She watches them again and again and I think just seeing them is very exciting for her even if she won't get to see them again in real life.
