I'm finishing off with one of my favourite roast chicken recipes inspired by Ursula's restaurant in Paddington. Like the restaurant, we've stuffed this chicken with a scallop and prawn mousse - my version pairs it with a fish sauce caramel butter sauce that is perfectly umami. One to save for someone special!
