Don’t you just love how dumplings seem to have taken over the world or at least our little patch of it? I’m fully in support of dumplingmania and I’d probably even vote a dumpling into parliament! ;) Whenever I ask Mr NQN where he would like to go for dinner the answer is inevitably “for dumplings”. He gives me that sad look, you know the look of a man who has a wife with a food blog and always chooses where to go. The poor dear! So he was very happy when I told him that New Shanghai had opened up a new branch in Chatswood with his favourite dumplings and we were going to visit (review to come ;) ). The poor thing was obviously starved of dumplings and he was so happy he did a happy dance! We ate six types of dumplings as well as the crab with noodles,  soup, pork belly hot pot all washed down with white tea and emerged very happy (and almost dumpling shaped ourselves).

    Hurray for dumpling-mania! Now if only Ms. Keneally can turn herself into a dumpling then we will vote for her! Perhaps after midnight?

    As for my favourite dumpling, it’d have to be the sticky rice dumpling with the peanuts and mushrooms inside, so moreishlicious!

    my favourite dumpling would have to be the any dumplings containing a prawn filling- the conbination of the seafood goodness covered in the light pastry just makes my taste buds do a happy dance :)

    My favorite have to be chicken dumplings but I do toss up between shrimp as well. But I would love to try the pan fried with the soup inside, they are next on my list of new.

    Boiled pork and chive! Always boiled, because at my local dumpling house you get more. Can you believe my boyfriend doesn’t like dumplings? I think it’s because he hasn’t had good ones, but still.. why am I dating him? :)

    Very much suffer from the same disease in epic proportions – prawn and/or pork ones come out tops! Mm. .mh! Should not complain – lunch will be grilled chicken rubbed with ‘ras-el-hanout’ from the marvellous ‘Le’Spice’ – another mm. .mh!

    mmmmmm… dumplings…
    delicious… i like the ones filled with stuff that tastes like custard… but isn’t actually custard. Also, most people i know hate them, so i get them all!!

    mmmmmmmmn…slurping the luscious soup and then gobbling up a perfectly steamed Xiao Long Bao makes me very happy! And so does the gentle flavour of prawn with a kick of ginger in Har Gow.

    I absolutely love all the vegetable ones, they come in their steaming bamboo container, and as you gently lift them out and onto your plate (or straight into your waiting mouth), the most delicious juice drips out of them …. so good,I think dumplings have been sent from heaven to feed our souls!

    Miss NQN!

    Nothing makes me happier than meeting my brother in Sydney at Kam Fook Chinese restaurant in Chatswood for yum cha on our mutual free weekends. We love the watch for the woman with the trolley who looks like our Popo, walk around the room :) When she recognises us, she immediately brings my brother his favourite garlic chive dumplings, which make him unbearable in small spaces for a long time afterwards!!

    And though simple, I would have to say my favourite dumplings are the (run of the mill) pork dim sim with chilli. I love them so much, that even though I’m allergic to prawns, and I know the chances of one lurking inside are very high, that I eat them anyway, just hoping I’ll get lucky!

    I LOOOVE dumplings!
    probably my favourite would be ones with chunks of prawns in them, pop the whole thing in my mouth and feel the little POP as you puncture the firm prawn flesh :) mmmmmm
    talk about torture! I’m on a detox right now so can’t even scurry down the road and have them for lunch :(

    For me…the experience of gushing steaming molten gold soup released from the crunchy based Shanghai Fried Pork Dumpling,mingling with the flavours and texture of that moist pork filling make this dumpling absolute perfection!!

    I can never decide between Shao Mai and Xaio Long Bao.

    Hmm. But I think, the best dumplings of 2010 were definitely the Shao Mai from Din Tai Fung.

    Amazing.

    The Oriental Tea Rooms in Melbourne do the most amazing peking duck dumplings in a rosy wrapper.

    Just divine.

    Hi NQN, I generally like all sort of dumplings, my favourite dumpling would be chai kueh (steamed vegetable dumpling) filled with stir fry dried prawns, carrots, yam bean, and lots of garlic. Eaten with chilli vinegar sauce…drool !

    Sounds great! My personal favourite is fish and chives dumplings from Dumpling King in Burwood (their fish and chives wonton soup is simply AMAZING too), closely followed by pork and vegetables.

    Basket shaped Siu Mai are so soft and fluffy with their hand made ‘skins’, filled with pork or minced prawns, juicy and flavourful delights of Chinese masters. Yummy yummy goes my tummy!

    I think I’ll stay out of this one since I don’t think i’d be traveling to Sydney anytime soon :(
    It’s funny how dumplings restaurants are called Shanghai this or Shanghai that..even though dumplings (other than xiao long bao) originated and are eaten more in north China :)

    My favourite is my grandmother’s special deep fried pork and chives dumplings. However, I still have no idea what’s the secret ingredient is :( But all deep-fried dumplings are good nevertheless.

    I had a fabulous dumpling banquet in Beijing with dumplings in all different shapes to match their flavours. My favourite in Singapore is crab and I love Xiao Long Bao.

    Unfortunately I have not yet been to the New Shanghai restaurant but I have managed to taste some of their yummy cuisine.
    They did a promotional gig at Dymocks in the city and yes I loved the food but the young girls serving were just so lovely and friendly. I especially enjoyed a type of fried pancake filled with pork which was excellent. With food this good I can see New Shanghai’s popping up everywhere.

    Love a dumpling! And have been to the Ashfield restaurant so would be very keen to try out it’s Chatswood counterpart. Always enjoy a prawn har gow with the slight crunchiness of prawns and the beautiful sweet flavour.

    Steamed vegetable with water chestnuts. I love the contrast between the soft, slick wrapper and then the fresh crunchiness of the water chestnuts between your teeth.

    Xiao Long Bao or “Little Dumplings in the Basket” are my outstanding favourite.. me and my partner had been waiting for months to try to taste theses mystical parcels and finally tried them at the recent night noodle markets in Hyde Park for the food festival.This was only fitting, as we had our first date at a dumpling bar in the city and fell in love over Yum Cha! I warned him to be careful as i tried them first and squirted soup all over the table! He didnt take heed and squirted soup all over me and my new favourite kahki blazer! After numourous dry cleaning efforts the blazer has gone to clothes heaven..but the memory of dumplings remains! Be warned- wear a bib!

    I love them all, steamed, fried or in soup. Once upon a time I used to race down to a yum cha place in my 1/2 hr lunch break and demolish a dozen dumplings myself!! Always get quite excited when I spot the big spinach and mushroom ones :-) sooo yummy, yummy, yum, yum. I’m suddenly feeling very hungry!

I have to inspect them all choosing the absolute crispiest one of all to begin with – thankfully I have a very understanding partner who just smiles and waits for me to choose them ….

    I was at festival first night and was all excited for the dumpling stall. I ordered only to find they had RUN OUT of prawn dumplings!!
    Devastated. Have been craving them like crazy since.

    pork and garlic chive gyoza – cooked in a pan so the bottoms stick and end up crispy, then steamed. Any dumplings with water chesnuts too as I love the crunch!

    My favourite dumpling is any one that is sitting in front of me next to my chopsticks and tea- I eat them all- the prawn and garlic chive they serve at north Ryde RSL hold a special place in my heart- pick me pick me pick me… I won’t let you down! thank you for the opportunity

    The dumpling craze hasn’t made it up to Brisbane yet unfortunately. My favourite is pork and ginger. That seems to be one you can get in quite a few places up here and comes with a yummy dipping sauce.

    I love the Fried Radish Cake from Shanghai Nights in Ashfield, especially when they are sitting next to another giant plate of the Pork and Chive dumplings. I have no idea how they get those little radish cakes to be so crispy and flaky, but I suspect it has to involve a whole lot of lard (yikes!) but best not to think about it. Mmmm wish I had some now. I’ve had the fried radish cakes elsewhere (incl. a place selling them at the recent Hyde Park food fair) but they just don’t have that airy, flaky pastry goodness on the outside holding together crispy, crunchy julienned radishness on the inside. Next time you are at Shanghai Nights in Asfield give them a try. They may not have as many recommendations as the steamy crunchy bottom pork dumplings, but they are definitely a true and loyal companion to the other heaving plates of dumplings I always order when there. Go the radish pancake!

    Definitely the crispy bottom steamed pork buns as pictured above. I love it how it’s like the xiao long bao where you get the soupy surprise inside the dumpling, but also matched with the super crispiness as well as soft fluffy bun. It probably is every single dumpling made into one package! :)

    Definitely a top notch xiao long bao (soup dumplings), one where the skin is not too thick and not too thin and contains the right amount of fillings and soup quota. Then dip in Chinese vinegar. Yum!

    My absolute favourite dumplings are the pork, peanut and snow pea dumplings that arrive on yum cha trolleys every now and then. They are sweet, porky and have just a touch of crunch. Fabo!

    Oh god I love dumplings! Im not quite sure what the proper name is for the ones I like but I love the steamed ones with the pork filling that is really juicy and explodes in your mouth. I have to admit though, Im also a total sucker for that vinegary dumpling sauce. Mmmmmm!

    Yum!!! I love any type of dumpling with crab or prawn, but my favourite of all is the ice cream dumpling from the dumpling bar in Potts Point/Kings Cross. Delicious and not like any dumpling I have ever experienced!

    Dumpling fiend I’ve been here a few times already since its probably the nearest place for me to get my fix.

    I love the pan fried porks buns with their juicy pork innards and the crispy base which I think counts as dumpling otherwise I’d say the traditional xiao long bao always a classic.

    Chive & pork! As a Cantonese Aussie, I was raised on mum’s Southern Chinese style wontons. Hence the succulent combo of chive & pork — so common and mundane in Northern Chinese dumplings, yet non-existent in Southern Chinese cuisine — was a late revelation in life for me. I’ve been hooked on these plain, yet sumptuous morsels ever since.

    Definitely the pan fried prok buns…I just discovered a New Shanghai in Charlestown, so excited! We tried 4 different types or pork dumpling, and the crunchy bottoms on these were absolutely a favourite!

    I can’t pick a favourite, as I have to always have xiao long bao, pan fried dumplings (and the best is when the base is so rock hard crispy like a fresh loaf of bread) and of course love my prawn har gau… Dumpling heaven :)

    I absolutely love Yumcha, but with a severe shellfish allergy, I love restaurants where I can order dumplings off a menu so i know the contents.     Prawn Dumplings. What makes the dumplings for me is the “special” sauce. It’s not just straight soy sauce. Used to organise regular Yum Cha in Chinatown during my misspent 20′s, on one fateful occasion a friend brought along his best mate, who is now my husband of nearly 13 years! Saw Toy Story at the movies that day.

    Pork and chives dumplings drowning in a bowl of chilli oil! First tried it in a little shop in Parramatta which has sadly moved and then found a near equivalent from Chinese Noodle House in Haymarket. Introduced my French partner and our friends to these hand made beauties and they were thankful for adding a new dish in their expanding Asian cuisine education.

    My background is shantung and we grew up with eating dumplings in many occassions. It is a tradition in our family that we will have dumplings at CNY, where my grandma will put a gold coin randomly, so all the grandchildren will have competition who would collect the most. By far, I havent found any good dumpling place but Shanghai Night in Chase is the closest to my grandma’s in term of xiao long bao.Which is my favourite :D I haven’t been back for 10 years and I miss my grandma’s and I would love to have lots of xiao long bao at this place.
    Boiled dumplings are better at Kingsford Dumpling house.

    my fav dumplings have always been prawn dumplings. ever since i can remember going to yum cha, i always had to order them – most of the time i ate 1 plate to myself. when i was little, my mum though i developed skin rashes from eating seafood, but i couldn’t give up eating prawn dumplings! (and now i don’t get any funny skin rashes from any type of seafood!)

    Me and my grandpa make jiao zi every weekend or so.. It’s such a yummy tradition. My favourite filling would be vegetarian where we put vermicilli, egg, mushroom and Ginger or the pork and chopped beans to give it a crunch. Best when doused in vinegar and black bean chili oil dipping sauce.
    I would love to win this to take him out somewhere to eat dumplings instead of having to make these himself for once!

    There are so many type of dumplings that I’ve had in my life, since my grandpa was from northern part of China, my childhood memories filled with him cleaning the prawns, and my grandma chopping the prawns and us the kids, making the dumplings! Those days are long gone, as my grandma has passed away two years ago…I especially like the dumplings(boil ones) with finely chopped prawns and mixed with eggs and chives. I also love the pan fry dumpling buns! Man !they are so filling and satisfying!

    I love New Shanghai, my colleagues and I would drive out to Chatswood for lunch all the time, line up for 15mins waiting for a table and then go back and tell the boss there was a loooooooong queue at the bank “Sorry!”. My favourite is the steamed vegetarian dumplings. There is always something so fascinating about dumplings that I can’t make the fact that their filling is chopped up so tiny to the size of a sesame seed and then steamed into handmade wrapping but comes out tasting anything but dull. The vegetable flavours are so fragrant that even the carnivore guys with us think “they’re not bad”

    My favourite has to be Xiao Long Bao. It’s almost ceremonious… you open the steamer, releasing the delicious XLB aroma, you eye your prey and gently grip it with your chopstick, careful not to pierce the skin (although too thin or too thick wrapping is the mark of the poor XLB). Then, quickly tuck your soup spoon underneath, resting the precious dumpling there for support. At this point, one may begin to have the soup one of two ways… by pinching the wrapping with the chopstick or taking to your lips and biting one of the loose wrapping flaps with your teeth (the latter method usually leads to burnt lips!); regardless of your plan of attack, quickly take the hole to your lips and slurp that soup up! Mmmmmm… I can taste it now…

    Xiao Long Bao is the bizness! Pick me, NQN! :D

    Oh my gawd, I love this blog and the pictures of all those delicious dumplings…. my kids are australian, and one thing we did regularly when they were little was sunday brunch yum cha at east ocean in the city … you have just reminded me how wonderful all those dumplings used to taste, and how very badly we need to return as grownups, and start educating my grand daughter turning 2 next month of the delights of dumplings! My condiment would have to be the indonesian sweetened soy sauce … I am a desperate sweet tooth !!! :)

    my fav dumpling is the one my ukrainian grandmother used to make – i remeber spending a day makeing enough to feed an army- not a family of 6! we made the pastry by hand, cut circles cusing old cups and placed a teaspoon of sugar and a teaspoon of fresh straberries or cherries in the centre- then boil. then eat! i remember hot summer says eating these boiled fruit dumplings, leaning over but still spilling the dumplings juices down my chin, smiling at my hard days work and the sweetness of summer and love from my grandmother.

    Since New Shanghai opened at Bondi Junction, I’ve been there at least once a week! The pan fried pork dumplings are to die for, and as a side note – the shallot pancakes with vinegar are sensational, along with the kelp salad. Cheap, filling and healthy, yum!

    Pan fried pork dumplings are to die for! I have eaten them at the Bondi store, absolutely beautiful. I have been wanting to try the Chatswood location for ages, but it is always so busy. Im sure there are many more delicious dumpling combinations to discover :)

    Xiao long bao……..pure heaven in a parcel and an engineering marvel. With a bit of research I found out the secret way they are made…..who would have thought!…….so clever! so delicious!

    When I saw this story on NQN, my head went into orbit and my eyes were popping out of my head. My husband and I regularly travel to New Shanghai restaurant in Ashfield from Newport to experience the juice explosion of the pork and crab meat dumplings.
    At first the explosion takes you by surprise, then you can’t get enough of it shooting down the back of your unsuspecting throat. Watching the little ladies make them through the glass is a treat too! I want to drive there now!!!

    OMG. Try ANY dumpling put infront of me. Just so long as I can wear my elastic eating pants..lol. But if I had to choose, I had a steamed prawn and Vermacelli noodle dumpling at yum cha a while ago that I cant get out of my dreams. Amazing

    xiao long bao is def my favourite, some vinegar, soy, fresh ginger and a lovely warm soupy xiao long bao and I’m a happy camper, can’t stop at one though, can eat my own weight in dumplings any day of the week…
