1 - Caprese Salad Candy Cane
Let's not mess about. There is literally nothing simpler than this Caprese Salad shaped into a candy cane. This easy salad simply requires rearranging on a plate and you've got a salad that took you 5 minutes tops!
2 - Coquito, Puerto Rican Coconut "Eggnog"
Usually the trick is to arrive with alcohol because everyone is usually prepared to have a drink or two at Christmas. Coquito is a delicious Puerto Rican alternative to eggnog made without egg yolks! This dreamy concoction combines coconut milk, evaporated milk, condensed milk, spices and rum. It's incredibly easy to whip up in just 5 minutes and can be stored in the fridge for up to a month - although it's so delicious, it might not last that long!
3 - Venetian Grilled Scallops
Seafood is always the quickest and easiest thing to prepare for Christmas and this classic Venetian-style scallop dish is a standout. It's incredibly simple to make with pantry staples, yet looks stunning served in the shell. Best of all it only takes 5 minutes to grill, making it perfect for last minute preparation!
4 - Christmas Tree Salad
Usually when you're a guest at Christmas the host takes care of the main because they have the oven and you bring sides and this is one that I have brought to Christmas because it's simple and you can never have too many salads at Christmas! Inside the kale outer is a delicious chopped chicken salad but potato salad also works well too!
5 - 10 Minute Snow Ball Cake
Okay so you've been asked to bring a cake for Christmas and you don't have time to bake. Grab a few things at the supermarket and assemble by filling a sponge with whipped cream and strawberry jam, coating it in whipped cream, adding coconut and Rafaello balls. It takes 10 minutes!
So tell me Dear Reader, are you the host this year for Christmas or are you the guest?
