Ok I'm starting easy. This recipe takes 5 minutes so there's no reason why you can't make this. It features cucumber, pomegranate and feta but we also use some other ingredients to flavour this fresh salad up!

This Middle Eastern pomegranate chicken was inspired by a staff meal at Buon Ricordo. It's made with pomegranate molasses with lots of pomegranate seeds and pistachios. The chicken is so deliciously tender that it's a favourite here in our house!

These lamb shanks use pomegranate in two ways: pomegranate molasses for the sweet, tangy marinade and sauce and fresh pomegranate seeds to serve. These shanks melt in the mouth thanks to some low and slow cooker or instant pot! There's nothing easier for a delicious weekend dinner.

4 - Eggplant with Pomegranate and Yogurt

Sometimes you need a great, versatile side dish. Enter this eggplant that is cooked until buttery soft and then combined with pomegranate seeds or arils, yogurt and herbs. Inspired by an Ottolenghi recipe it is super versatile and also a great meal on its own!

5 - Pomegranate Jellies

These pomegranate jellies are a pretty two toned jelly made with pomegranate juice in one layer and a vanilla bean panna cotta on the other. These have a lovely balance of fruity and creamy, plus they're great after a big meal if you want something light.
