1 - Stuffed Rigatoni Pasta Cake
Now this is a baked pasta you want to bring out for a special occasion. I'm not suggesting you make it for a weeknight dinner but it's great for weekend cooking or a dinner party! The rigatoni is stuffed with a mixture of 3 cheeses atop a layer of tomato - and it serves just like a cake!
2 - Chorizo Baked Pasta Shells
Chorizo is a powerhouse of flavour in any recipe and here it is combined with feta and spinach and tucked into giant shells before being smothered with sauce and cheese. This dish takes about 15 minutes' prep too!
3 - Baked Macaroni Cheese
Confession: I like baking macaroni cheese a bit more than I like stovetop mac and cheese. The reason why is because I like the golden crispy cheesy bits and this has plenty along with bacon, macaroni and cheese sauce!
4 - Ravioli Lasagna
One of my favourite life discoveries was that you can sub beef and pasta sheets in lasagne with beef ravioli. And you can bake the ravioli from frozen too so that you don't need to pre-boil it! Plus I use my favourite quick bechamel that takes only 3 minutes in a food processor.
5 - Gnocchi Bolognese Bake
Two of the best things during winter are gnocchi and Bolognese ragu. This Bolognese ragu is based on the one that I learned how to make at a cooking school in Bologna, Italy and is so rich and delicious!
