Peanut Butter, Strawberry and Basil Toast

This isn't so much a recipe as an eating suggestion - but a strong one because it's so delicious! I loved it so much I couldn't not share it with you. Slices of miche are topped with your favourite nut butter, in my case it's peanut butter but feel free to use almond or cashew if you swing that way. Then fan slices of strawberry, basil chiffonade and drizzle with honey for a delicious weekend breakfast!

As I said I feel almost silly suggesting it but then it was pointed out to me that cafes serve something similar and charge a pretty penny for it. I actually first saw this on Instagram by @kalejunkie via @thefeedfeed and I was in desperate need of spring and this is spring on a plate.

I didn't expect to love it as much as I did but it was so delightful in three respects: firstly I had all the ingredients which made me feel like fate was involved. Secondly, it was so tasty and perfectly balanced. Thirdly, it was the ease at which it was made. Sometimes you feel either smug or like you cheated the system when something so simple turns out so good and this is one of those times.

Apart from the good fortune of having all of these things at the ready, I also have a few new things in my kitchen to show you that as part of the In My Kitchen series hosted by Sherry from Sherry's Pickings that shows the new and fun things that we have in our kitchens. Most of these items are from my recent trip to Chicago. I had a wonderful time eating all that they had to offer-Chicago really is such a fun city to visit!

The first item is my latest obsession and a Chicago success story. And you know that when I get obsessed with a food or thing it takes over my whole life. If you've ever had Garrett Popcorn you'll know that it is literally the best popcorn in the world. I am a huge popcorn lover anyway but was slightly skeptical, I mean how good could it be? Well it's so good that I ate half of that enormous tin on the left and then texted Mr NQN to come home to take it away (he didn't because he's used to strange messages like that from me). And then the next day I made him take the rest to work with him. Temptation, thy name is Garrett Popcorn. And you can bet I am working on a recipe to replicate the Chicago mix here in Australia because we can't get it here (honestly, the brands that claim to do it fall waaaay short).

I may have mentioned that I'm a peanut butter addict. It's true, not a day goes by that I don't have a spoonful of it. And the great thing about America is that they love it too. I bought these snacks because they will no doubt satisfy my late night peanut butter cravings.

The next items are from Dylan's Candy Bar on the Magnificent Mile. I knew that it was a huge candy store but the help yourself candy station was at another level. I scooped items like the "OMG" (where I found myself saying "Oh my god" when I tried one), Sriracha and chocolate coated almonds, chocolate coated popcorn, chocolate coated gummy bears and mint malt balls. The fudge is a peanut butter and jelly fudge while the two chocolate bars were for gifts as I liked the sound of those flavours.

These items are from my friend Monica from the Lulu's popups.One day Ivy gave me some cactus one day to cook with (recipe to come soon!) and Monica asked me about the cactus after seeing it on my Instagram stories. I ended up giving some to Monica and she gifted me this Creole seasoning, some poke seasoning and pickle salt which are such fun items to experiment with!

Lastly, I also have some Australian honey that I was recently sent by Superbee in flavours like ginger, eucalyptus (good for winter), macadamia and my favourite the honey and cinnamon which goes so well with the peanut butter toast here! I have no doubt that I'll be working my way through this over winter.

An Original Recipe by Lorraine Elliott

Preparation time: 5 minutes

Cooking time: 0 minutes

Serves 2

  • 4 slices of your favourite bread (1-2 slices bread per person depending on size)
  • 1/2 cup peanut butter (I slather it on thickly though)
  • 6 strawberries, sliced
  • 4 teaspoons honey
  • 4-5 basil leaves

Step 1 - Spread peanut butter on bread and top with strawberries. Drizzle honey on top and add chiffonaded basil leaves.
