1 - Grilled Zucchini With Burrata

Adding burrata to anything is a great idea but when you have a glut of zucchini you grill it and season it with a delicious dressing made with capers, garlic, vinegar and extra virgin olive oil. It's such a simple side dish that goes with anything!
2 - Lemon Zucchini Cake
This is a simple lemon zucchini loaf cake that has an incredible texture thanks to the lemon juice and grated zucchini in it. You can have it as is or with the silkiest cream cheese frosting. Plus it's a cinch to make in a Thermomix!

This barbecued zucchini salad has everything-texture, flavour and all sorts of goodness. It's also a great salad to take along to a picnic too as it doesn't wilt or go soggy!

OK I know roulades look fancy and like you've really upped the ante. But this zucchini roulade is like a cousin of the zucchini slice. The outside is like an omelette so it's easier to roll and the inside is made with cream cheese, bacon and tomatoes. It's seriously delicious!
