This delicious, classic Aussie apricot and coconut slice becomes a breeze in the Thermomix - no chopping, no fuss; make the base in about five minutes and ice it in three for a quick, crowd-pleasing treat.
Thermomix Apricot Slice No Bake Recipe

- 250g/8.8ozs. shortbread biscuits
- 300g/10.6ozs. dried apricots
- 100g/3.5ozs desiccated coconut
- 200g/7ozs. sweetened condensed milk
- 150g/5ozs. butter
- 1 teaspoon vanilla
- Pinch of salt
White Chocolate Icing
- 200g/7ozs. white chocolate
- 2 tablespoons coconut oil
Step 1 - Line a 26x16.5 cm/10.4x6.4inch baking tray with at least 1 inch sides with parchment.
Step 2 - Place the apricots in the Thermomix bowl and chop roughly using speed 5 for 10 seconds. Remove from the bowl and set aside. Add biscuits and process on speed 5 for 5 seconds. Add the apricots back into the bowl along with the desiccated coconut, condensed milk, butter, vanilla and salt. Set to 4 minutes 80C on 0.5 speed. Spread the mixture out in the prepared tray and chill.
Step 3 - Chop chocolate on speed 8 for 10 seconds. Add the coconut oil to the bowl and cook for 2 minutes, at 45C on Speed 2 or until liquid. Spread over slice and refrigerate to set.
