Bolognese sauce, the Italian family favourite is easily made in the Thermomix! Make this deliciously rich mince beef sauce that hails all the from Bologna. Authentic Bolognese sauce is served with tagliatelle, not spaghetti and does not include tomatoes. I have added tomatoes since a lot of people love this but feel free to leave it out too for a taste of real Bolognese.

Thermomix Bolognese Sauce
An Original Recipe by Lorraine Elliott
Preparation time: 10 minutes
Cooking time: 38 minutes
Serves: 6
- 1 large onion, peeled and quartered
- 2 carrots, cut into rough chunks
- 2 sticks celery, cut into rough chunks
- 4 cloves garlic, peeled
- 50ml/1.7flozs olive oil
- 500g/1.1lbs. beef mince
- 100g/3.5ozs. speck or pancetta, cut into cubes
- 150ml/5flozs. beef stock
- 125ml/4flozs. red wine
- 2 beef stock cubes extra
- 400ml/14ozs. diced tomatoes
- 125ml/4flozs. tomato paste
- To season: salt, pepper and sugar
Step 1 - Place the onion, carrots, celery and garlic in the Thermomix and set to speed 7 for 30 seconds. Scrape down the sides and add the oil and set to 100C for 5 minutes speed 2.
Step 2 - Add the beef, speck or pancetta cubes, stock, red wine, crumbled stock cubes, diced tomatoes and tomato paste. Set to cook for 30 minutes at temperature 100C on gentle stir. Season with salt and pepper and a teaspoon of sugar (taste to see how much sugar you need, it depends on how sweet the tinned tomatoes are).
