How Scotch Egg Easter Eggs Will Make Your Easter Fun!

Watch their faces as you serve them Scotch Eggs only to open them up and find that they aren't a mince wrapped boiled egg but instead, a double cooked crumbed creme egg instead!

They are an absolute cinch to put together. Just blend a packet of cookies with some cream cheese and process some golden cookie crumbs. Then cover the unwrapped creme egg in the cream cheese cookie mixture and then roll in the golden crumbs. You have your Scotch Egg Easter Egg!

I got rather excited when Mr NQN came home because I couldn't wait to serve him these treats. Truthfully we never buy creme eggs-they're way too sweet for me and hurt my teeth but Mr NQN loves them as he adores anything sweet. He absolutely loved them and ate two in one go!

I read a lot of "loving at the moment" lists so I thought I'd put one together. As you can imagine, a lot of it is food or television related. Such is the life of a sloth.

What I'm loving right now:

Podcasts: S-town, the new podcast from the makers of Serial about a misanthropic, charismatic man called John B McLemore from a small town in Alabama with an eidetic memory and a brilliant mind. It's only seven episodes long so easily digestible and they've dropped all of the episodes at once which I love. I also love the podcast My Favourite Murder. You know that conversation you have with people about serial killers and you can't stop talking about the most terrifying serial killer (BTK for me!). Well these two women have made a Podcast and it's like talking with your friends. Except they're talking and you're not but you know what I mean.

Stand up comedians on Netflix: Crista Alonzo's Lower Classy, Ali Wong's Baby Cobra and Dave Chappelle because we all need a laugh nowadays.

Dumplings: say no more right? It's getting cold here!

Jumpers: specifically stealing Mr NQN's chunky knitted jumpers.

Chai lattes: it was pointed out to me a while back that I am a very predictable drink orderer. I was in Melbourne and Nina was in Sydney and she knew that I had just sat down at a cafe. "I know you just ordered a chai latte" she said spookily as if she were looking over my shoulder. Ooh and I have the very best chai latte recipe to share with you soon too!

And of course four day Easter long weekends coming up and playing tricks on people with food too!

Preparation time: 8 minutes

Cooking time: 0 minutes

Makes 4 "Scotch Eggs"

  • 4 Kingston biscuits
  • 1 packet Tim Tams
  • 65g/2.3ozs. cream cheese
  • 4 Creme eggs

Step 1 - Blitz the Kingston biscuits in a food processor until they resemble crumbs. Place on a shallow plate. Then blitz the Tim Tams with the cream cheese until it becomes a cohesive mixture. Place in a bowl or on a plate.

Step 2 - Unwrap all of the creme eggs. Divide the Tim Tam mixture into four and press the mixture around each creme egg patting and shaping it til smooth. Then roll in the Kingston crumbs.
