These Halloween Devilled Eggs are cute, spooky and super delicious! Filled with a curried mayonnaise mixture, they're easy to make and great for parties. We turn them into little mini pumpkins for Halloween. Just a warning though: these are popular so make more than you think you'll need!
About Devilled Eggs
These Devilled or Deviled Eggs are not only adorably cute for Halloween but they're utterly delicious too! Boiled eggs are cut in half and filled with a mayonnaise and curry spice filling. I promise you will not be able to stop at just one!
My mother's devilled eggs always used curry powder because she always had it handy whereas she never had Dijon mustard handy and I'm positive that she has never eaten pickle relish in her life. Her recipe calls them "curried eggs" but I always knew them as deviled eggs.
Why are they called Devilled or Deviled eggs? Because they usually had a spicy ingredient in them (the mustard or a spice like paprika). I mean I don't know if I'd call them spicy nowadays but back then I'm sure they were considered hot!
I'm also sharing a tip on how to make your eggs easy to peel and which eggs are best for boiling!

Tips For Making Devilled Eggs
1 - Eggs that are older are the easiest to peel. I don't always have old eggs as we go through them at such a pace but one way to make the shells easy to peel is to add a teaspoon of bicarb to the water. The alkaline property of bicarb loosens the shells from the eggs!
2 - To boil eggs, add eggs to a pot of cold water and lower them very gently. I find that the shells crack when you add them to boiling water.
3 - Since we are hard boiling the eggs, we boil them for 10-12 minutes.
4 - Be very sparing with the food colouring, one drop is usually enough!
5 - If you are making regular devilled eggs (aka not making them a pumpkin), then traditionally they are served with a little sprinkle of paprika or cayenne pepper if you want it spicier.
Step 1 BOIL - Add cold water to a pot and place on stovetop. Gently lower eggs into the water. Add bicarb if the eggs are fresh. Bring to a boil then knock down to a simmer and cook for 10 minutes.
Step 2 COOL - Have a bowl of ice water ready. Drain the water and add the eggs to the ice water. Leave for 5 minutes. Carefully peel eggs.
Step 3 MASH - Cut eggs in half lengthways. Remove the yolks and place these in a bowl or in a food processor. Add the mayonnaise, turmeric, curry powder, onion powder, salt and orange colouring. Using a fork mash it or puree it in the processor until smooth.
Step 4 PIPE - Place the yolk mixture into a piping bag and pipe into the egg white halves piping a bit extra for a "bump". Press down the yolk with your finger to smooth it over.
Step 5 DECORATE - Using a toothpick draw four curved stripes like (())) to simulate a pumpkin. Add a chive piece on top and push it gently into the yolk mixture.
Substitution notes and ingredients:
Use your favourite mayonnaise. I use either Kewpie or Best Foods. If you are out of mayonnaise, try using soft butter. That's how they make the egg butter in the Finnish rice pies.
I use Baba's curry powder as it is potent and aromatic.
Tip: store your onion powder in the freezer! Otherwise it will clump together once the seal is opened.
You can use a coriander stalk instead of a chive stalk or a very slender spring onion.
Personal Note
While Mr NQN and I both love eggs, the number 1 egg fan in this house is Mr Teddy Elliott. A recently, our dear little Teddy had to go in for emergency dental work. Because he was born with an underbite, his front teeth were turning brown as the saliva was exposed to air so no matter how much we brushed them, they remain discoloured and this only got worse over time.
One night we were brushing their teeth and fur and Mr NQN noticed that Teddy's tiny front teeth were so loose that he could move them back and forth. This was very alarming and he got booked in straight away for a dental. I thought his underbite was cute as it always looked like he was smiling.
I always worry about dogs going in for dentals because we almost lost little Mochi during a dental. They told us that she almost died on the table and my poor little girl took ages to recover and was groggy for a very long time.
We have a new vet for Teddy and Milo and as instructed, I rang them at 1pm and they told me that Teddy had woken up well and they told us that we could pick him up at 3pm. We arrived at 3 o'clock on the dot with Milo. They explained his medicine to us and then the door opened and Teddy ran out ecstatic to see us. I swear if he wasn't missing those teeth I wouldn't have guessed that he had just been under a general anaesthetic.

They told us no walks for 2 days and no running for 4 days but Teddy was having none of that. He wanted to run, he wanted to sniff and he ate voraciously. And after a few days Mr NQN and I both realised independently that Teddy seemed happier with his teeth out. Perhaps they were causing him pain but it's like a weight has been lifted off him! And he is happier than ever to eat!
