Asparagus is in season and that means it's spring! I've got 5 recipes where you can use up anything from 1 bunch to 4! There's an easy asparagus and prosciutto tart, an egg and asparagus restaurant dupe salad, a whole roasted fish with asparagus, scallops with asparagus risotto and a gorgeous asparagus, broad bean and sugar snap salad with creamy ricotta!
1 - 30-Min Asparagus & Prosciutto Puff Pastry Tart
What's better than roasted asparagus? It's asparagus wrapped in prosciutto! I like it even better than bacon wrapped asparagus as it is a bit more delicate and suits the puff pastry base better.
2 - Egg and Asparagus Salad
I fell in love with the egg salad and asparagus combination when I first tried it in a restaurant. It's such a gorgeous combination and goes with seafood and meat easily. It uses up 4 bunches of asparagus so great to have up your sleeve when you see it on special!
3 - Roasted Whole Barramundi Asian Style
This is one of my favourite recipes when I have lots of asparagus and want to bake a whole fish. You can do this with any fish (I'm now allergic to barramundi so I do it with snapper a lot) and the fish roasts with 1 bunch of asparagus to make it an easy tray bake.
4 - Broad Bean & Asparagus Salad Recipe
Broad beans, sugar snap peas and asparagus go together not just for the taste but they all appear in springtime. They make a wonderful combination of textures and shapes with a creamy garlic ricotta!
5 - Scallops & Asparagus With Risotto Recipe
I love this risotto especially during this in between weather that spring brings and this is great when you just have 1 bunch of asparagus and don't mind devoting a bit of time to stirring by the stovetop!
