Sometimes all you want to make is a light, lemon cake and here are 5 of the best! There's a classic lemon chiffon cake, a lemon drizzle cake with crackling on the outside or a super simple cake that you can do in the food processor. Or perhaps you're after an Italian Australian lemon cake or a zesty cake inspired by Lemonade?
1 - Lemon Chiffon Cake
I always think that at least once in your life, you need to make a chiffon cake because it's so magnificent. The texture of a chiffon cake is unlike any other and once you get the hang of it you'll keep making others!
2 - Lemon Drizzle Cake
I LOVE this cake because it's a butter sponge that can be made in the Thermomix or food processor. After that it is drenched in this lemon sugar syrup that dries so that it crackles on the outside as if by magic!
3 - Lemon Cloud Cake
Looking for the simplest lemon cake ever? All of the ingredients for this light lemon cloud cake are just added to a food processor and then blended up! Then a layer of mascarpone is spread on top. Too easy!
4 - Lemonade Cake
This is one of my favourite cakes as I love lemonade and anything lemony. It has layers of cake sandwiched with lemon curd, lemon sherbet and soft whipped cream dripping down the sides!
5 - Mimosa Cake
You may not have heard of a Mimosa cake but it is a beauty and there's a link between Italy and Australia with this cake! It has layers of a lemon and vanilla sponge sandwiched with Crème Diplomat and finished by sticking tiny cubes of sponge all over the outside. It's so light and airy!
