This prawn shrimp garlic toast is incredible! I love prawn or shrimp toast but Laura recently told me about a version that uses garlic bread as the base and I ran so fast to make it. You use a cheap supermarket garlic bread to make this and it adds another dimension of flavour. The idea is from Chef Dan Hong. I use my prawn shrimp toast recipe that you guys love!

It's SO easy. Place everything in the food processor and that's your filling done!

It's quick to make. This will be done in 20 minutes, tops!

There's no need to refrigerate the filling to firm it up. You can use it straight after blending it up!

The garlic bread has another level of flavour and juiciness to the centre of the toast. It's seriously good stuff.

Ingredients For Prawn Shrimp Garlic Toast

Prawn Garlic Toast Recipe (Shrimp)

Garlic bread - Don't go fancy. Go basic for the garlic bread that is pre-sliced. I used Global Bakehouse Value garlic bread.

Prawns - I always use frozen prawns that I've thawed overnight in the fridge. It seriously saves you from peeling a lot of prawns!

Spring onion - Aka green onion (you can also use chives).

Garlic - Fresh garlic cloves.

Sesame Oil - Usually found in the Asian aisle of the supermarket

Ginger - We use two types of ginger: crushed fresh ginger and gari or pink pickled ginger (that you get with sushi). The gari adds just a little bit more flavour to it.

Egg white - 1 egg white to bind the mixture together.

Salt - Fine salt.

White pepper - Chinese recipes often use white pepper.

Sugar - White or caster sugar. This is my mother's trick for every Chinese recipe to balance the saltiness.

Sesame Seeds - White sesame seeds (you can also use a combo of white and black for a nice visual look).

Oil for frying - Use whatever oil you want for frying as long as it has a high smoke point.

Tips For Making Prawn Shrimp Garlic Toast

1 - Pat the prawns or shrimp until dry (I drain and then lay out on paper towels and then pat dry) as we don't want the mixture to be wet or sloppy. Especially if you're using thawed prawns.

2 - Make sure to dip the bread side in the oil first just briefly. Otherwise when it comes to turning it over the toast won't want to stay that way and will want to flip back the other way onto the prawn side.

3 - If you want to make this a bit fancy, you can use half prawns, half scallops.

4 - You can sub the sesame seeds with panko breadcrumbs.

I love prawn toast and here's another recipe to try next: Basic Prawn Toast or try Singaporean Roti Babi which is mince on top of fried toast made with beef or chicken. I always like to try a few things if I have the oil going.

Ingredients Needed

  • 1 loaf garlic bread, 225g/8oz
  • 300g/10.6ozs raw, peeled prawns
  • 30g/1oz. spring onion, roughly chopped
  • 2 small or 1 large garlic clove, peeled
  • 2 teaspoons sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon pickled pink ginger (gari)
  • 1 egg white (30g/1oz)
  • 1/2 teaspoon salt
  • 1/2 teaspoon white sugar
  • 1/4 teaspoon white pepper
  • 30g/1oz sesame seeds
  • 2 cups oil for frying
  • Mayonnaise and sweet and sour sauce for serving

Step-By-Step Instructions

Step 1 PRAWNS - Place the prawns, spring onion, garlic, sesame oil, ginger, gari, egg white, salt, sugar and white pepper in a food processor and process until it forms a paste. Scoop into a bowl.

Step 2 BREAD - Separate the garlic bread slices using a knife and add 2-3 tablespoons (around 40g/1.4oz) of the prawn filling (basically the same ratio of filling to the bread). Smooth down the sides with a palette knife. Repeat with the rest of the pieces. Dip the prawn side into the sesame seeds.

Step 3 FRY - Place oil in a deep fat fryer or cast iron pot and heat to 180C/350F. Place the toast bread side down for 10 seconds and then flip over to place the prawn side down for 3 minutes. Turn over and cook the bread side for another 2 minutes. Drizzle with mayonnaise and serve with sweet and sour sauce while hot.

Personal Note

Last week we had dinner at a Chinese restaurant with Queen Viv and Miss America who are both headed on a trip to Europe in August for Miss America's birthday. They're stopping to see our mutual friend Christian in the Netherlands and then catching a night train to Prague as they have both heard that Prague is beautiful.

"'Night train to Prague' sounds like a great title for a book or a movie!" I said to them. Miss America hasn't been overseas in many years and after his stroke he is getting back on his feet much better.

They both pointed out that they both have no sense of direction so it will be an interesting time. While a part of me would like to go with them just to see what antics they get up, it would probably be like going overseas with your parents. While we are united in our love for an adventure, we also have very different interests than me and they love museums and churches and I think they would tire of my food fervour. I can't wait to hear their tales when they come back!
