This prawn shrimp garlic toast is incredible! I love prawn or shrimp toast but Laura recently told me about a version that uses garlic bread as the base and I ran so fast to make it. You use a cheap supermarket garlic bread to make this and it adds another dimension of flavour. The idea is from Chef Dan Hong. I use my prawn shrimp toast recipe that you guys love!

Ingredients For Prawn Shrimp Garlic Toast
Garlic bread - Don't go fancy. Go basic for the garlic bread that is pre-sliced. I used Global Bakehouse Value garlic bread.
Prawns - I always use frozen prawns that I've thawed overnight in the fridge. It seriously saves you from peeling a lot of prawns!
Spring onion - Aka green onion (you can also use chives).
Garlic - Fresh garlic cloves.
Sesame Oil - Usually found in the Asian aisle of the supermarket
Ginger - We use two types of ginger: crushed fresh ginger and gari or pink pickled ginger (that you get with sushi). The gari adds just a little bit more flavour to it.
Egg white - 1 egg white to bind the mixture together.
Salt - Fine salt.
White pepper - Chinese recipes often use white pepper.
Sugar - White or caster sugar. This is my mother's trick for every Chinese recipe to balance the saltiness.
Sesame Seeds - White sesame seeds (you can also use a combo of white and black for a nice visual look).
Oil for frying - Use whatever oil you want for frying as long as it has a high smoke point.
Tips For Making Prawn Shrimp Garlic Toast
1 - Pat the prawns or shrimp until dry (I drain and then lay out on paper towels and then pat dry) as we don't want the mixture to be wet or sloppy. Especially if you're using thawed prawns.
2 - Make sure to dip the bread side in the oil first just briefly. Otherwise when it comes to turning it over the toast won't want to stay that way and will want to flip back the other way onto the prawn side.
3 - If you want to make this a bit fancy, you can use half prawns, half scallops.
4 - You can sub the sesame seeds with panko breadcrumbs.
