New Caledonia surprised me with food that felt French and unmistakably Pacific at once. In and around Noumea, I found blue prawns, achard and market picnics, then travelled south to Goro for a bougna whose banana, yams and coconut milk made the long wait around the steaming parcel worthwhile.
