About Chilli Scrambled Eggs
Chilli scrambled eggs are a very popular cafe dish in Australia and a spin on traditional scrambled eggs. They're very easy to make and involve easy to find ingredients and take just 5 minutes to cook - TOPS!
For my favourite chilli scrambled eggs, I serve the scrambled eggs topped with chilli oil and crumbled feta cheese on top. The cooling pops of feta balance the warm chilli. This recipe tastes like it came from your favourite cafe!

Ingredients For Chilli Scrambled Eggs
Oil - Extra virgin olive oil (avoid pure olive oil or virgin olive oil as these are more processed and lower quality than extra virgin).
Butter - Salted butter (you know me!) :)
Eggs - Fresh large eggs. Straight from the fridge is fine.
Chilli crisp oil - You can buy this or you can make your own super easily using my chilli crisp recipe here.
Feta cheese - Greek feta cheese, crumbled.
Snow pea sprouts - This is to give it more a cafe style look (optional).
1 tablespoon extra virgin olive oil plus etra for toast
1 tablespoon butter
3 large eggs
1-2 tablespoons chilli oil
1 tablespoon crumbled feta cheese
A few tendrils snow pea sprouts (optional)
1 slice sourdough, toasted
Step-By-Step Instructions
Step 1 - Heat a non stick frying pan on medium heat. Whisk the eggs (3 large eggs) together well until there are no streaks.
Step 2 TOAST - While the frying pan is heating up, toast bread (1 slice sourdough) and drizzle with a little oil.
Step 3 FRY- Add oil (1 tablespoon) and then butter (1 tablespoon) to the pan and when sizzling and bubbling add whisked eggs to the pan. Using a flat bottomed spatula, pull the eggs from the outside to the centre and tilt the pan slightly. Keep turning the eggs making sure that you get a tight, round shape - you want lots of wrinkles and ridges so work quickly. You won't need to flip the eggs. Once the circumference has been set just leave the heat on until the eggs are glossy, bright and set on top.
Step 4 SERVE- Lift the omelette onto the toast and top with chilli oil (1-2 tablespoons), crumbled feta (1 tablespoon) and snow pea sprouts (a few tendrils, optional).
Personal Note
We tend to always order chilli scrambled eggs when we go away for brunch or breakfast. It's one of those breakfasts that is always tasty no matter where you go. Recently Mr NQN and I were away for the weekend and staying in a hotel for just one night. We had had a long lunch that finished at 3:30pm that was great but Mr NQN had come down with a massive headache. So much so that as soon as we checked into the room, he simply crawled into the bed and wouldn't leave.
We normally go for a walk around 5pm every day and I wanted to get my steps in but even then he said he wouldn't be able to go for a walk. I went by myself and then made it back around 6:30pm with some medication for him. When I opened the door he was still asleep but gradually woke up over the next couple of hours. We wouldn't be able to go out that evening but that didn't bother me. I love just being in a hotel room. All I was doing was watching Furious on my computer and could have been doing it anywhere!
When we chatted to the travel writers that were also staying at the hotel they too had done nothing but stay in the room and we were all very happy with that situation. The next morning's chilli scrambled eggs were great too.
So tell me Dear Reader, do you like just staying in a hotel room? Or is your hotel room somewhere just to lay your head? Have you ever tried chilli scrambled eggs?
