House of Suns is a lovely, hidden away micro bakery and roadside stand located down towards a lookout in the lower Blue Mountains. This very popular micro bakery is powered by one woman who opens the stand once a week to sell her beautiful cakes, brownies and cookies from a sunny yellow wooden stand. Find out what makes this bakery so unique, how to find it and when to go so that you don't miss out!

The story starts with Romina or Romi Gardella who lives in Springwood in the Blue Mountains with her husband, three kids and a dog. Originally from Chile, Romi arrived in Australia in 2009 and met her husband Dom in Byron Bay. They got married and stayed in the Blue Mountains where they have lived for the last 14 years.

"I am trying to honour the heritage that I grew up with and then showcase that in Australia. I am very much self-taught and I am definitely a sweets person. So whenever I can, I am actually looking for that sweet treat," says Romi.

She started off baking and selling her baked goods to cafes. Then she had an idea that she could open up a roadside stand outside her house on the street offering her baked goodies to hikers on their way to Martin's Lookout. She and her husband created the daffodil yellow painted stand using pallets from Bunnings and launched House of Suns in April 2026.

Romi's cake stand was originally an honour stand much like the country style honesty stands that sell honey, eggs and produce from hobby farms. Except hers involved cakes, cookies, brownies and other treats. It has since taken off.

Now every Saturday morning, queues form from 8:30am as people wait until 9am for Romi to emerge with her cakes. The selection changes every week and depends on what she wants to make, what is in season etc and she keeps the offerings fresh for repeat customers, some who come every week. The food has Chilean and South American inspiration, from the alfajores (South American cookies) to cakes with Dulce de Leche and maracuya (passion fruit).

To get to House of Suns you can put it in Google Maps. You drive to Batman Park, Springwood and park there and then walk the 1km or so to the stand (around 10-12 minutes walk along a paved road). There is parking closer to the stand but Romi asks that her customers leave that for those that have trouble walking the distance as this parking is for anyone that wants to visit Martin's Lookout.

I'm the third in the line behind a couple that queued at 8:30am and a family of four. Quincy, Romi's beautiful gentle dog comes out as the advance party to greet and welcome everyone. Then Romi starts to bring out trays of cookies and cake stands laden with cakes.

All of these are homemade by Romi made with flour, butter, eggs and sugar as well as ingredients like Callebaut chocolate and fresh passion fruit, blueberries and raspberries. These are not vegan or gluten-free.

We end up with a cookie and a range of cakes (because cake!). Romi describes each item to each set of customers and slices and packages them all up for you. You can either pay by cash (although she doesn't have change) or PayID her on the spot.

Torta Manjar Nuez $12 and Alfajor $9

I try the alfajor with passion fruit. I normally find alfajores nice but sweet but one thing that I notice with all of Romi's offerings is that they aren't overly sweet, even the ones that include dulce de leche or caramel jam. But this one with tangy passion fruit and drizzles of white chocolate is perfectly sweet, with a nice short buttery texture to each bite.

I also try the walnut and dulce de leche layer cake with lots of thin layers made up of thin panqueque layers of vanilla sponge layered with dulce de leche and walnuts.

Torta Caluga $12

The Torta Caluga is a no bake raspberry layer cake made with crushed buttery cookies, homemade toffee and raspberry sauce and is adorned with fresh raspberries on top. This would be great with a cup of coffee or tea.

Torta Mixta $12

The torta mixta is a blueberry cake with two layers of light vanilla bean sponge sandwiched with a layer of dulce de leche, crunchy hojarasca pastry and blueberry cream with whipped cream and fresh blueberries on top. I enjoy the different textures in this cake and also that the cream on top is unsweetened as this balances the overall sweetness of the cake well.

Torta Hojarasca $12

Romi describes Torta Hojarasca as a classic Chilean cake. Hojarasca means fallen leaves in Spanish and is the name given to this crunchy pastry cookies. It is layers of crunchy pastry (hojarasca) spread with dulce de leche for a sweet, crunchy bite. On top is a layer of dark chocolate.

Dulce de leche sponge $12

Last is one of Romi's creations with layers of a dulce de leche sponge cake spread with passion fruit jam caramel and fresh passion fruit to balance the sweetness of the cake. All of the cakes are freshly baked and moist and they stay that way even for a few days as we sample them over the next few days.

The name House of Suns was inspired by her children Alma, Sol and Inti who all have elements of nature or the sun in their names. "I really see them as like my three little suns, they bring so much joy and abundance into my life. Where we live in the Blue Mountains borders on the national park with incredible views and a sunset that I'm literally looking at right now is radiating this divine afternoon light," says Romi.
