Ingredients For Sheet Pan Chicken Fajita Recipe
Capsicums or bell peppers - I used a pack of three colour capsicums.
Onions - 2 medium onions. Red, white or brown onions work.
Chicken - Boneless, skinless chicken fillets. Use thigh if you prefer your chicken a bit juicier or use breast or tenderloin if you prefer white meat.
Taco seasoning mix - I make my own so I always have a jar of this handy (and I've shared the recipe below) but there's no need to buy a specific fajita mix, you can use taco seasoning and my recipe below.
Soy sauce - This sounds crazy but soy sauce is one of the first ingredients of a fajita seasoning mix! It seasons and browns chicken but also tenderises it.
Sugar - A little white sugar just to balance the flavours and help the sauce caramelise.
Oil - I use extra virgin olive oil but you can use whichever oil you like.
Tortillas - Flour or corn tortillas, small or medium size. Flour tortillas are more pliable and soft and more often used for fajitas.
Tips For Making Sheet Pan Chicken Fajita Recipe
1 - These chicken fajitas are mild and not very spicy at all so they are good to feed a family. If you want to add more heat, add slices of fresh jalapeno to each wrap.
2 - Fajita seasoning mix is similar to a taco seasoning mix. The main difference for fajita seasoning mix is that it uses soy sauce or soy sauce powder! Seriously, take a look at the packet and that is the first ingredient. It helps to season, tenderise and colour the chicken.
3 - Covering the mixture with foil allows the chicken to steam and locks moisture in for the first half. The second half of cooking caramelises the chicken.
4 - Serving upgrade: make it feel like a restaurant by bringing it to the table in a sizzling cast iron dish!
5 - Other options for fillings to pair with the chicken and capsicum peppers: shredded lettuce, guacamole, spiced rice, pico de gallo salsa, grated cheese, tomatoes or refried beans.
