Love raspberries? These five raspberry recipes are all about that delicious sweet and tangy berry flavour! There's a rich white chocolate raspberry cheesecake, an easy four ingredient ice cream and a raspberry cream pie that is a pushy recipe. Or try fluffy raspberry meringue clouds and gooey jam toast cookies. There's something here for your next dinner party or just because you feel like dessert!
1 - White Chocolate & Raspberry Cheesecake
Raspberries and white chocolate are such a delicious pair and this baked cheesecake shows you why! Tangy raspberry sauce is swirled through a rich white chocolate filling with a buttery Biscoff biscuit base. It's also a great one to make ahead, leaving you just the decorating to do before your guests arrive.
2 - Raspberry Passion Fruit Ice Cream - 4 Ingredients
Just four ingredients and no ice cream maker? Yes please! This creamy no churn ice cream has swirls of raspberry jam and fresh passion fruit through it. It was inspired by the Twister ice cream cups I loved as a child and that sweet, tangy fruit with creamy ice cream is still such a wonderful combination.
3 - Raspberry Cream Pie
This raspberry cream pie is a pushy recipe Dear Reader! Inspired by the famous pies at Briermere Farms on Long Island, it has a buttery shortcrust base, a fluffy cream cheese and whipped cream filling and a jammy raspberry topping. Start it the day before so it has time to set, then get ready for that first slice!
4 - Raspberry Meringue Clouds From Heaven
Have some egg whites tucked away in the freezer? Turn them into these enormous raspberry meringue clouds! They're soft and fluffy inside with raspberry sauce brushed over the outside. Serve them with cream or ice cream and extra sauce, or break them up for a very delicious Eton Mess.
5 - Jam Toast Cookies
If you love raspberry jam on buttered toast then you have to try these cookies! Made with real buttered toast, browned butter, raspberry jam and white chocolate, they're crispy at the edges and soft and gooey in the centre. Give the dough a good rest in the fridge for the best flavour and texture, then put the kettle on!
So tell me Dear Reader, which raspberry recipe would you make first? And do you prefer raspberries with white chocolate or cream?
I've also got something very fun for you this week to try. This Smorgastarta or Swedish Sandwich Cake is about seafood and is a great dish to serve at Christmas (which is coming up rapidly!). Get the recipe on my Substack! x
