1 - Gluten Free Polenta Porridge with Figs
This polenta porridge is made in a few minutes and is creamy, delicious and comforting. Top it with figs or whatever fresh fruit you fancy and some chopped nuts and a drizzle of honey!
2 - Muesli Granola Muffins
Sometimes you want something sweet but not exactly like cake. Enter these muffins made with home made toasted muesli or granola, these have goodness from oats, seeds, nuts, spices, goji berries, ginger, rose petals and berries! Or you can make these using your favourite bought muesli!
3 - Roasted Vegetable Muffins
Not all muffins are sweet. These savoury gluten free muffins have lots of roasted vegetables and a base using tapioca flour! They're so delicious and tasty even if you aren't a gluten free eater!
4 - Two Ingredient Banana Pancakes!
This is a recipe that I got from my trainer friend Nina. It's the easiest pancake recipe and involves just banana and egg (I've heard it is very popular with readers that are also into fitness) but you know it's so good that I'd happily eat these every morning!
5 - Coconut Yogurt Parfait
One of my favourite yogurt breakfasts is this parfait made with coconut, yogurt, blueberries, figs and chia seeds with date syrup or honey. And while it looks impressive it takes all of 5 minutes to make!
