About This Dill Pickle Dip
This dill pickle dip is incredibly delicious and uses up an entire jar of pickles! It's creamy, tangy, spicy and moreish and made with easy to find ingredients. Made with pickles, green onion, cream cheese, sour cream, yogurt, cheese, herbs, hot sauce and French onion seasoning or ranch, it is delicious and once you dip you won't be able to stop!
This recipe also makes a lot of dip so it is ideal for feeding a crowd. It is originally American where they use Grillos pickles and Ranch seasoning mix. Both of these aren't available in Australia but the best sub for this is French Onion soup mix which actually works better IMHO. I brought back some Ranch mix from my last trip to America and tested one version with Ranch and one with French onion soup powder and I preferred the latter. If you love cheese and onion chips then I think you'll love this pickle dip.
You can make this with bacon bits or without, I think it's incredibly tasty without the bacon too and sometimes don't bother with the bacon especially if I am time poor.

Ingredients For Dill Pickle Dip
Dill pickles - No need for anything fancy, you can also use dill pickle chips or hot pickle chips (my favourite)
Cream cheese - we use the spring onion and chive cream cheese but you can also use regular cream cheese and add extra chives.
Greek yogurt - natural yogurt, no flavours.
Cheese - We use grated tasty or cheddar cheese
Sour cream - Use full fat for a creamier mouthfeel
Green onion - Around 2 sticks is perfect for this
Jalapeno chillies - Use 1 if you like it mildy spicy or 2 jalapenos if you like it hotter
Buffalo hot sauce - I used Frank's hot sauce.
Dill - fresh chopped dill works as does dried dill.
French onion powder or Ranch seasoning mix - Depending on what you can get where you are! I prefer it with the French Onion mix personally.
Bacon - I like streaky bacon for this but eye bacon also works if you want it leaner.
Potato Chips - Use your favourite potato chips for this! There is no best flavour, it depends on your taste.
Tips For Making Dill Pickle Dip
1 - You want your cream cheese to be soft and spreadable so to soften it, remove it from the packaging, place on a plate and microwave on low temperature checking every 30 seconds. When it is soft, it will meld with the yogurt and sour cream better.
2- This dip is really quite forgivable and adaptable. If you like it tangier, add more yogurt and if you like it spicier add more hot sauce and jalapenos (I can never get enough heat!).
3 - When the dip is first made, it is easy to scoop with potato chips but if you refrigerate it it will firm up so it will be harder to scoop with chips. Just leave it at room temperature for 30 minutes or so to soften.
4 - Don't throw out the pickle juice! I reserve the pickling liquid to re-pickle for a quick refrigerator pickle. Wash and slice cucumbers thinly and place in the pickle juice and keep in the fridge. In 24-48 hours it will be ready.
