About This Breakfast Burrito

Breakfast burritos are a great portable way to enjoy breakfast while on the go. Soft tortillas are filled with scrambled eggs, bacon or chorizo, cheese, guacamole and hash browns and rolled up and toasted in a pan. They're high in protein and packed with tasty filling! Breakfast burritos are a Tex Mex cousin to the very popular bacon and egg roll.

Breakfast burritos are very popular in America and available everywhere we went but in Australia I haven't seen that many breakfast burritos on menus. Lunch burritos like Mission Burritos yes but not so much breakfast burritos.

Why You'll Love Breakfast Burritos

  • These are high in protein with plenty of egg, cheese and bacon or chorizo. Using bacon will get you around 80g of protein or around 60g if using chorizo per burrito!

  • These are a real choose your own adventure breakfast and you can use anything that you like on a big breakfast plate. Try pico de gallo if you want some tomato in them. These also are delicious with sauteed mushrooms or home fries/roasted cubed potatoes or sweet potatoes.

  • Breakfast burritos are easy to make and take around 15 minutes active cooking - if you can fry eggs and bacon then you can make these. You cook most of it in one frying pan. The only exception is that I cook the hash browns in the air fryer while I cook the scrambled eggs and bacon in the frying pan.

  • You can use a ripe avocado but I love using homemade guacamole as it is a bit punchier and brighter than plain avocado.

Hash browns - Use 4 small triangular hash browns or 2 larger oval ones. I used the ones designed for use in the air fryer.

Eggs - Choose medium or large eggs.

Meat - Bacon or chorizo. Mr NQN loves chorizo, I love bacon so go with your preference :)

Cheese - Pan fried halloumi is great in a breakfast burrito but if you like it a bit more soft and melty, use grated cheddar/red leicester.

Guacamole - I always use my go to (guac recipe here)

Tortillas - Look for jumbo or XL tortillas where there are 6 tortillas per 450g/1lb.

Tips For Making Breakfast Burritos

1 - Start the guacamole first as the onion steeps in the lime juice and salt for 20 minutes before adding the avocado. Once finished, cover guacamole with a lid or clingfilm so that it doesn't brown.

2 - Wrap up the burrito by tucking in the sides first.

3 - Try not to overload your breakfast burritos, especially when you're making them for the first time.

Recipe Overview

Preparation time: 15 minutes plus 20 minutes for guacamole

Cooking time: 20 minutes

Serves: 2

Ingredients Needed

For 2 Breakfast Burritos

  • 4 small triangular hash browns
  • Choose one: 260g/9oz streaky bacon or chorizo, chopped into a medium dice
  • 1 teaspoon butter for frying
  • 5 large or 6 medium eggs
  • Choose one: 150g/5oz halloumi or grated cheddar/red leicester
  • Guacamole (recipe here)
  • 2 jumbo or XL tortillas

Step-By-Step Instructions

Step 1 HASH BROWNS - Heat a frying pan on medium heat and set the air fryer or oven to cook the hash browns according to directions. You will need to turn these over halfway through baking and season with salt and pepper when done.

Step 2 BACON/CHORIZO - In a dry pan on medium heat, add the bacon or chorizo and cook until caramelised and crispy at the edges and remove from pan. The pan should have some oil in it from the chorizo or bacon. Turn heat down to low.

Step 3 EGGS - Whisk eggs in a bowl together and add 1 teaspoon butter to the pan and cook on low heat. Add the eggs and after 30 seconds fold occasionally - do not over stir as it will become watery. You want it still gooey but set. If using grated cheddar cheese, sprinkle on top of the omelette and allow it to melt. Then remove from the pan and set aside. If using halloumi, pan fry the halloumi on both sides until golden, around 3 minutes on each side.

Step 4 ASSEMBLE - Spread guacamole across 3/4 of the burrito and cut hash browns in half. Then make a centre pile of half of the scrambled eggs, bacon or chorizo and hash browns. Roll up the sides first and fold over the end closest to you and then seal the furthest end together with a little water. Sit with the seam side down.

Step 5 PAN FRY - Place a dry pan on medium heat and brown the burritos on all sides. Wrap in wax paper, parchment or foil. Cut in half in the centre.

Personal Note

I make these for Mr NQN on the weekends as he likes to play sport and these are easy for him to take with him for when he goes wing foiling, kayaking or running. He hasn't been running for a couple of months now as he has had a really annoying cough.

He caught it 2 months ago and it isn't contagious as I've never caught it from him nor has anyone else he has had contact with. It's just very annoying though because he feels self conscious about coughing at events and at conferences. Sometimes he has to explain that it isn't COVID or contagious but 2 months is a long time to deal with a cough. I would hear him coughing in his office all day and night but thankfully when he came upstairs to go to sleep it would abate and he would get a peaceful night's sleep.

The one day he came upstairs and dramatically announced, "I've solved the mystery of my cough!" with his arms outstretched towards the ceiling. Basically since the start of winter we would have the air conditioning on all day long to keep the house warm. And the dry air would irritate his throat. But when he went upstairs, I would always have the humidifier on because I always use it when I have the heat on in the bedroom. So that's why he was able to sleep well.

That night, he bought himself a personal humidifier and from the next day his cough pretty much disappeared!
