If you can't choose between deviled eggs and potato salad, this potato salad with egg recipe gives you both! Tender potatoes are tossed in a creamy deviled egg dressing with chopped eggs, pickle or gherkin relish, Dijon mustard, green onions and crispy bacon. It's a great side dish to make ahead of time for BBQs, potlucks and picnics.

This potato salad with deviled eggs is the best of both worlds. It has tender potatoes and a spicy, creamy deviled egg dressing and chopped up boiled eggs. This is a seriously delicious salad for pot lucks, picnics or cookouts.
My favourite potato salad was Jalapeno Potato Salad because I like to add a spicy touch to potato salad but this might just be my new favourite potato salad!
Why You'll Love This Potato Salad with Eggs
a) It's a great make-ahead salad. In fact I try and make it a day ahead of time to allow the flavours to develop!
b) the eggs add more protein to your salad. I also add bacon but this is optional (but I LOVE bacon in potato salad).
c) Don't want it spicy? Leave out the Sriracha and cayenne and then it's just a delicious potato salad x egg salad. Alternatively, I've got other potato salad recipes like Olivier Potato Salad or Pesto Potato Salad.

Ingredients For Deviled Egg Potato Salad
Potatoes - Dutch cream, Nicola, Yukon gold or baby chats
Salt - To season the potato water
Eggs - Hard boiled and peeled (see below for tricks on how to boil eggs)
Bacon - streaky bacon is perfect for this. Eye bacon can also be used.
Mayonnaise - Use your favourite mayonnaise for this! Everyone loves a different brand :)
Gherkin relish - I use the masterfoods one. It's also great in burger sauce.
Sriracha sauce - Or your favourite chilli sauce.
Dijon mustard - Dijon is sharper than American yellow mustard which is on the sweeter side.
Dill - fresh or dried works here.
Celery salt - Found in the spice aisle
Cayenne pepper - Also from the spice aisle for a hot kick.
Sugar - white or superfine sugar works here.
Green onion - aka scallions!
Sweet Paprika - Found in the spice aisle.
How To Make Easy To Peel Boiled Eggs
Fresh eggs can be really difficult to peel as the shell sticks to the whites and because we go through so many eggs, they always tend to be fresh. But I've got a trick to making any egg easy to peel that I originally shared on my deviled egg recipe!
Place a pot of water to boil and add 4 tablespoons of white vinegar and 2 teaspoons of bicarb to the pot. Once the water is boiling, use tongs to gently lower eggs into the water. Boil for 12 minutes. Submerge in an ice bath until cool enough to handle and then peel!
Note: Do not use any eggs that are cracked. Also using eggs straight from the fridge is totally fine.
Tips For Making Deviled Egg Potato Salad
1 - I hate peeling potatoes so I just scrub them well and leave the skins on. Cut them into small pieces, around 1.5cms or 2/3 inch big and then boil.
2 - Always boil your potatoes in salty water. Add 2 tablespoons of salt to your water and this will season the potatoes all the way to the inside.
3 - Some people like to mash half of the potatoes up so that the salad has a softer texture (similar to a Japanese potato salad).
