Instead of shaping and wrapping each individual Chinese dumpling, you layer it like a lasagne using dumpling filling and won ton pastry instead of pasta and before long you'll have the most easily, sliceable dumpling lasagne!

  • It comes together really quickly. Seriously, this is a real time saver! Plus who doesn't love dumplings?

  • I used my mother's wonton filling recipe for the base and all you need to do is stir all ingredients together in a bowl and then it's ready! The only difference is that I left out the cornflour as I didn't want the dough to be sticky, I wanted it to be looser and more spreadable.

  • Usually dumpling lasagne recipes call for steaming but if you want to make it in a lasagne dish, then chances are, finding a steamer big enough is very difficult. But I'm going to show you how to steam bake to perfection it in the oven!

Ingredients For Dumpling Lasagne

Square wonton wrappers - These are the yellow dumplings wrappers, found at the supermarket and Asian grocery stores. Usually sold in 300g/10.6oz packets.

Pork mince - I used lean pork mince. You can also use chicken mince.

Prawns - I used those handy frozen raw prawn cutlets that I thawed in the fridge the night before.

Green onion - Green shallots or scallions.

Shiitake mushrooms - I usually use dried shiitake mushrooms as they're always in my pantry. I rehydrate these by pouring over boiling water and covering for 20 minutes. Squeeze out excess water and finely dice. Or use fresh shiitakes!

Garlic - Fresh garlic, crushed.

Soy sauce - Light soy sauce.

Ginger - Mince fresh ginger or used jarred minced ginger.

Sesame oil - Found in the Asian section of the supermarket or at an Asian grocery store.

Chilli crisp oil - Use your favourite store bought chilli crisp or make your own chilli crisp oil.

Egg - Whole, large egg.

Tips For Making Dumpling Lasagne

1 - This recipe is for a 26x19x8cm/10x7.5x3 inch baking dish. You can scale it up or down or make individual ramekins. If you use round ramekins, use round wonton gyoza pastry.

2 - Find a baking dish that can fit in a larger baking dish and where the water can come up halfway up the sides of the dish. We are using a water bath to steam it in the oven instead of a steamer.

3 - The egg is important to give the filling a looser, more spreadable quality so that it is easy to smooth over the pastry.

4 - This lasagne has 6 layers of won ton pastry.

Recipe Overview

Ingredients Needed

  • 220g-250g/7.7-8.8oz square wonton wrappers
  • 400g/14oz pork mince
  • 200g/7oz raw prawns, shelled, finely chopped
  • 3 sticks green onion, sliced, green and white
  • 4 shiitake mushrooms, finely diced
  • 3 cloves garlic, crushed
  • 1 tablespoon soy sauce
  • 2 teaspoons minced ginger
  • 2 teaspoons salt
  • 1.5 teaspoons sugar
  • 1 teaspoon sesame oil
  • 1 egg, beaten

To Serve

  • 3 tablespoons Chilli Crisp oil
  • 2 tablespoons sesame dressing (like Kewpie roasted sesame dressing)
  • 1 stick green onion, sliced on the diagonal

Step-By-Step Instructions

Step 1 FILLING - Preheat oven to 160C/320F fan forced or 180C/350F conventional and put the kettleful of water on to boil. Mix the pork mince, prawn meat, sliced green onion, shiitake mushrooms and crushed garlic together and mix with gloved hands. Add the soy sauce, ginger, salt, sugar and sesame oil in and knead in with hands. Then add the beaten egg last. It should be a loose, spreadable mixture.

Step 2 ASSEMBLE - Take a bowl of water and dip each pastry square into the water for 1-2 seconds. Place in the baking tray slightly overlapping. Spread a thin layer of the filling and smooth over with an angled spatula. Repeat this process until you have 5 layers of meat and then finish on a layer of wrapper.

Step 3 STEAM BAKE - Place this in another baking dish that is larger and deeper. Pour the hot water from the kettle til it reaches halfway up the side of the lasagne dish. Then drizzle 2-3 tablespoons of water on top of the pastry. Cover the baking dish with foil tightly so that it can create a steamy environment for the lasagne. Bake for 35 minutes. Let rest for 5 minutes and then remove foil gently.

Step 4 GARNISH - Sprinkle with green onion, chilli crisp oil and sesame dressing and serve in slices.

Substitution notes:

Try using minced chicken, pork, turkey or beef instead of pork!

Personal Note

Mr NQN is a massive fan of this dumpling lasagne. The last time I made this, he was having meetings in the city and I was going to meet him in the afternoon as I had an appointment. I suggested bringing Teddy and Milo along and he could take them to the park while I went to my appointment. At 3:30pm I got changed and ready to go.

Usually when we put harnesses on, Milo is good but Teddy doesn't cooperate very well. He meeps and then runs all over the place. Firstly, he goes to one of his beds and then tries to run away when you try to catch him. He also has car anxiety so it also takes him a while to get into the car. We have to let him jump up on his seat himself, if we force him in, he sometimes throws up. So patience is required which is fine, as long as Teddy is happy.

But that afternoon I looked at Teddy as we were running a bit late. I said to him, "Teddy, we're going to meet Daddy!" and I swear Teddy nodded. He didn't run around at all, instead he sat there like the best boy as I put on his harness and then he followed me straight out and jumped into his seat with no fuss! He knew that he was going to see his daddy and there was none of the usual production!
