Hot Honey is one of the most versatile condiments that really makes food sing. This spicy honey uses just 2 ingredients: chilli flakes and honey, cooked on a low heat. I'll show you how to make an easy hot honey in less than 5 minutes!

Hot honey is fantastic with chicken tenders, fried chicken, pizza (especially pepperoni pizza), grilled seafood, sandwiches (hot honey and mortadella is a great combo!), halloumi or even on cheese boards. Also try it over ice cream!

Hot Honey Recipe

Honey - just a regular runny honey will do! If you go for a locally grown honey you may get some health benefits from that as it tends to be less heat treated and contains trace amounts of local pollen which some think acts like a natural allergy vaccine.

Chilli flakes - Choose mild or hot chilli flakes depending on your taste. Some mild chilli flakes are: Aleppo (Pul Biber), Ancho, Gochugaru (Korean Chilli Flakes) or Urfa Biber. Hot ones are usually labelled so or you can go for Calabrian chilli flakes and I would suggest avoiding ghost pepper or extremely hot chilli flakes. I've had hot honey using those and it is very unpleasant.

Tips For Making Hot Honey

1 - Can I use fresh chillies in hot honey? Yes, you can also use fresh chilli for hot honey but you need to consume all of the hot honey within a couple of weeks and keep it in the fridge. Fresh chillies add moisture to the hot honey which can lead to bacterial growth and botulism.

2 - Can I use chilli powder in hot honey? Yes but since you will not be sieving the chilli powder out of the honey, start with 1/2 teaspoon of chilli powder and taste the honey for spiciness adding more if desired.

3 - Can I use hot sauce in hot honey? Yes! Use 1-3 teaspoons of hot sauce stirred into the honey.

4 - Do not let the honey boil or it will become too thick to drizzle and will affect the flavour. You want just the honey to be warmed up gently.

5 - Do I need to heat the honey if I want to use raw honey? I get it, sometimes you want to keep your raw honey raw because of the health benefits! And that's no problem, using chilli powder or hot sauce is your best bet for raw honey as chilli flakes won't impart enough heat without being heated. If using chilli powder start off with 1/2 teaspoon and then taste it for heat level. If using hot sauce, stir in 1-3 teaspoons depending on taste.

  • 1- 1.5 tablespoons chilli flakes (see note above)

Step-By-Step Instructions

Hot Honey Recipe

Step 1 SIMMER - Place honey (250g/8.8oz) in a small saucepan on low heat. Add mild chilli flakes (1 tablespoon) for a mild hot honey, hot chilli flakes (1 tablespoon) for a medium hot honey or hot chilli flakes (1.5 tablespoons) for a spicy hot honey. Simmer for 3 minutes making sure to not exceed 70C/160F. Remove from the heat and then sieve seeds out and place honey into a glass jar.

Optional: Taste the honey and if you want a stronger flavour, let steep for 5 minutes and then sieve.

Storage: Hot honey should be kept at room temperature in a cool, dark place (pantry is ideal) and will last for 3-6 months.

Personal Note

I ran out of chilli honey recently. I could have sworn I had half a jar but the last time we had a pizza party everyone loved it so much and it got totally gobbled up (I think fingers were even being stuck in the jar!). I was putting an order through for delivery when I saw the price of hot honey and baulked. It was $8.20 for a 375g bottle of hot honey and it was more expensive than pure honey.

A part of me wanted to buy it because it was easy but another part of me, a stronger part of me loathed the idea of paying for something more that only takes 5 minutes to make. It's probably the same side of me that refuses to order chicken in a restaurant because we make it so much! So instead I made a batch from scratch because sometimes 5 minutes is a good investment.
