Asparagus wrapped in bacon is just about the most delicious way to serve asparagus. It's one of those easy recipes that goes with so many dishes and with asparagus in season, it's something that we're making almost every week! Asparagus spears are wrapped in bacon rashers and then roasted to perfection. Then they are glazed with hot honey or maple syrup and then finished on the grill. The asparagus ends up perfectly tender while the bacon ends up crispy and glazed this way. It also has this wonderful sweet and salty flavour!
Just a warning: you may want to double up this recipe because it is SO good! Every time I make it, I make enough for 4 people and Mr NQN and I devour them all haha!

Ingredients For Asparagus Wrapped In Bacon
Asparagus spears - I really prefer fatter asparagus spears for this as I like the texture but more slender asparagus spears also work. With thin or mini asparagus, you will need 4-5 asparagus spears per bundle rather than 2.
Bacon - We are using streaky bacon rashers and not short cut bacon or eye bacon.
Step 1 PREP - Preheat oven to 180C/350F fan forced or 200C/400F conventional. Line a large baking tray with parchment or foil and place a rack on top.
Step 2 SNAP - Snap the asparagus (24 asparagus spears) towards the end of the spear - it will naturally snap at the point where the woody part meets the tender. Trim the end until flat for presentation.
Step 3 WRAP - Take asparagus spears (2 spears per bundle) and wrap bacon (1 rasher per bundle) around the spears leaving the tops uncovered. Place on the rack and repeat with the remaining asparagus and bacon. Drizzle with olive oil (2 tablespoons) and roast for 20-23 minutes.
Step 4 GRILL - Preheat grill to high heat and line the baking tray with foil. Brush the bacon with the hot honey (1/4 cup) generously and place the spears under the grill. Cover the asparagus tips with foil so that they don't burn. Grill for 3-5 minutes (watch carefully). Season with salt and pepper and serve.
Personal Note
I've got a quick question for you today Dear Reader. It actually comes from Mr NQN. He was watching me taking my vitamins one day and remarked how weirdly I take them. "I take vitamins normally, you're the weird one," I responded. I knew exactly what he meant.
He takes vitamins by taking a gulp of water first and then putting the vitamins in his mouth. I take them by putting the vitamins in my mouth and then drinking my water. I tried it his way once and I almost choked on the water!
I did ask my friends and they do it the same way as I do but then he started to think that they were just agreeing with me so he asked me to ask you: how do you take your vitamins or medicine? Is it water first and then pill or pill first and then water? :)
