I'm starting off with my favourite carrot cake and perhaps the most striking of all five carrot cakes. This is a beauty flavoured with Biscoff, everyone's favourite biscuit spread. There's richly spiced carrot cake with sultanas and crystallised ginger, a layer of Biscoff spread, a coating of cream cheese and nutty browned butter frosting and an adornment of carrot fronds, gerbera petals and carrot tops!
So I hear there are people out there that don't love carrot cake. WUTTTT!!?? Yup so this cake is for those people or the undecided. It's half a rich chocolate cake and half a carrot cake so you've just about pleased everyone!
Oh hang on, did I forget the vegans? Well vegan carrot cake is just about the easiest carrot cake there is out there! Plus you won't get a runny buttercream like you get with cashew cream cheese. This recipe has a wonderful tangy buttercream that tastes like cream cheese icing!
This is one of my favourite spring time cakes. It's a moist carrot and blood orange cake with coconut, blood orange, spices and cream cheese frosting plus the goodness of carrot to keep this cake wonderfully moist!
Everyone loves Hawaii and dare I say everyone loves this Hawaiian carrot cake with pineapple, macadamias and ginger added to a traditional carrot cake and pineapple flowers on top! There's even the silkiest buttercream where you use much less sugar than a traditional frosting!
