Brussels sprouts are so good for you, perfect if you're looking for healthy recipes! They contain vitamin C, vitamin K, fibre and ALA omega-3 fatty acids.
Brussels Sprouts - we use baby Brussels sprouts because they are milder, sweeter and more tender and take less time to cook. If you have anyone that dislikes Brussels because of childhood trauma, they may like the baby Brussels better!
Oil - I use extra virgin olive oil. Avoid virgin or pure olive oil as they are lower quality.
Sherry vinegar - A fruity, complex and mild vinegar made in Cadiz in Spain. Substitutes include rice vinegar or champagne vinegar.
Mustard - Sometimes I use seeded mustard, other times I use Dijon mustard.
Sugar or honey - Sherry vinegar needs a sweetener to balance it and you can use caster or superfine sugar or honey. Opt for sugar if you want to make this vegan.
Golden shallot - eschallot. The one that looks like a small onion! You can also use red onion in a pinch.
Garlic - 1 large fresh garlic clove.
Tips For Making Air Fryer Brussels Sprouts
1 - I like air frying the Brussels sprouts cut side down so that the centre doesn't dry out but the leaves get crispy. But do half time up and half time down (or just shake it all around) if you prefer if they are a bit crisper and more dried out.
2 - Do Brussels sprouts make you gassy? Yes it's a thing with cruciferous vegetables. Brussels sprouts contain sulfur and raffinose, a complex indigestible carbohydrate that is broken down in the gut. One way to cut down on this is to cook them, which helps reduce the amount of raffinose. Start with smaller portions too.
Step 1 PREP - Wash and dry the Brussels sprouts in a colander. Cut the Brussels sprouts in half and toss in the oil. Preheat the air fryer to 190C/375F and line the air fryer tray with a liner.
Step 2 COOK - Lay the Brussels sprouts in a single layer on the parchment. To keep them moist, I lay them cut side down so that they don't dry out, but you can simply arrange them in a single layer (you may have to do this in batches if your air fryer has a smaller capacity). Cook for 12 minutes. You can also turn these halfway to cook all over although I keep them facing down for the whole time.
Step 3 DRESSING - While the Brussels sprouts are cooking, make the vinaigrette. Add the oil, vinegar, mustard, sugar or honey, shallot, garlic and salt and pepper to a jar and shake to emulsify. I usually make this once the Brussels sprouts are in the air fryer to give the sugar a few minutes to dissolve. Toss the Brussels sprouts in the dressing and serve.
Personal Note
We've been eating a lot of Brussels sprouts as they are in season. I actually really like winter vegetables as I love roasting vegetables. And after dinner I love snuggling in and watching tv. I have been watching a lot of dark tv and true crime. I think it's the idea of being home at night during winter, having the fireplace on and watching something a bit scary that appeals to me (although truthfully I do this in summer too).
Recently I've been hooked on a show called Widow's Bay. At first I avoided it because I am not really into horror but this is a horror comedy and really quite light on horror. Still there are scary things including a scary clown (seriously, why are clowns so scary and why are clowns still part of kid's parties?!).
I was midway through the season when Mr NQN and I were away in a regional town for his birthday. We decided to drive into town to get some supplies for dinner. But as we pulled up everything seemed very dark. Even the supermarket was barely lit up.
Shadows loomed long as the last rays of the sun set and we were soon plunged into pitch dark with the occasional car light blinding us. It turned out that it was a good old fashioned power outage but I had Widow's Bay on my mind. "Don't get out!" I told Mr NQN, "It looks like a horror movie out there! What if a clown comes out of the darkness?". He had to talk me down to get out of the car that night!
