This fettucine with chilli, rocket and lemon is pure heaven in taste and simplicity. Use fresh pasta and you'll have dinner ready in less than 10 minutes!
Use any long pasta: don't worry if you can't get chilli fettucine. You can also use spaghetti, linguine, bucatini or spaghettini!

Lately we've started a new dinner tradition. If the weather is nice and it's not too windy (because wind is the enemy!), we venture out to Sydney Park for a dinner picnic.
It kills two birds: Teddy loves it because he gets a walk and meets plenty of dogs and we get a walk too but in a nice setting. Also since this summer has been a bit cold and wet, the warmer weather seems as good as reason to celebrate with a picnic as any.
We reuse the plastic takeaway containers too
One day we brought this pasta and the custard tart, another day we brought cheese and fruit, salad and frittata. It's not an elaborate picnic, it's basically what we would have eaten at home and we don't stay for a long, just an hour all up including the walk. But it has helped ease us back into the working schedule.

Fettucine With Chilli, Rocket & Lemon

Preparation time: 5 minutes
Cooking time: 6 minutes
- 300g/10.6ozs. fresh chilli fettucine or regular fettucine
- 80ml/3flozs. extra virgin olive oil
- 1 large or small red chilli (depending on how spicy you want it), sliced
- 1/2 lemon, zest and juice
- 50g/1.7ozs. bunch rocket (I used wild rocket)
- Parmesan or pecorino cheese
- salt and pepper
Step 1 - If you're using fresh pasta it cooks within 2-3 minutes so start on the oil first. If you are using dried pasta, start the pasta cooking first. Heat oil on medium heat and add the chilli and lemon zest and allow it to start to sizzle.
Step 2 - Put the pasta onto cook in a pot of salted boiling water. When it is cooked, remove the pasta from the pot using tongs and coat it in the chilli and lemon oil. Add some pasta cooking water (you'll probably need around 1/4 cup or so). Add lemon juice and rocket and toss off the heat. Generously grate cheese on top and season with salt and pepper and serve.
