Make the most of Christmas leftovers with these leftover turkey rolls - so moreish and delicious. Layers of tender turkey, cranberry sauce, sage mayonnaise, melting Swiss cheese and a scattering of crisp chips are piled into a six-pack of soft buns; they take about five minutes to assemble and the gravy dip is entirely optional.
Tips For Making DELICIOUS leftover turkey rolls
1 - This leftover turkey recipe can be done ahead of time and can sit at room temperature covered for up to 2 hours as part of a spread. You can also fill the rolls and keep them covered in the fridge until you want to bake them.
3 - The gravy is usually all gone by the end of Christmas as are the drippings but try my easy gravy made without pan drippings. It has so much flavour with a great colour to it too!
4 - I serve these turkey leftover rolls with gravy and stuffing flavoured potato chips!
5 - I brushed one lot of these rolls with butter, the other half I didn't. It's up to you but brushing them with butter makes them glossy.
6 - You can also grill these buns to melt the cheese. I've even microwaved them to melt the cheese! This is a judgement free zone :)
Step 1 -Preheat oven to 160C/320F fan forced. Place the buns on a large sheet of parchment (large enough to wrap the entirety of the filled buns up). Slice the buns in half horizontally. Spread the cranberry sauce on the base and then mix the 1/2 teaspoon sage powder with the mayonnaise and spread over the top half.
Step 2 -Layer the turkey slices and then the stuffing. Then add Swiss cheese on top. Press down gently. Mix the melted butter with the 1/4 teaspoon sage powder (you'll only use half the butter) then wrap up in the parchment. Place in a baking dish and cover with foil. Bake for 25 minutes. Brush with remaining butter and add crispy sage leaves.

Gravy Recipe (NO Drippings needed!)
1 cup/250ml/8.8flozs water
1 teaspoon chicken stock powder
1/2 beef stock cube
40g/1.4ozs cranberry sauce
1/2 sprig rosemary
1 teaspoon sugar
1/2 teaspoon dried onion powder
1/4 teaspoon black pepper
2-3 teaspoons cornflour/fine cornstarch mixed with 2-3 teaspoons water (depending on how thick you like gravy)
Step 1 - Place the water, stock powder, beef stock cube, cranberry sauce, rosemary, sugar, onion powder and black pepper in a small saucepan and bring to a boil. Simmer for 5 minutes. Strain this mixture.
Step 2 -Place back on the stove on low heat. Whisk in the cornflour slurry and whisk until smooth and cook until thickened. The gravy will thicken up a little bit more upon cooling.
Personal Note
Every year Laura and I have a tradition that we call Costco, Crab and Christmas. The Friday before Christmas we go to Costco to buy ingredients for Christmas and then have a delicious crab dinner somewhere and exchange Christmas presents. It's both practical and fun and I mean who doesn't want a friend who will run errands with you and then sit down to dinner with you?
This year we met at Costco and had a list of things and one of those things on the list were these Hardbite turkey stuffing chips that Laura found on TikTok. They're from Canada and the bag of chips is huge (625g or 22ozs!). These chips are so full of flavour and have a perfect bite to them. Plus they taste like turkey stuffing!
The reason why she shared them with me is because she's also making these turkey leftover rolls and saw how perfect they would be in it. She actually inspired me to make the stuffed and rolled turkey and since she's having a small Christmas there will be lots of leftovers.
These chips were destined for these turkey leftover rolls. I love leftover rolls so much that I often bake extra so that I can get more turkey for these rolls. We also bought the buns for these leftover sandwiches at Costco where they come as a pack of a dozen and I tried to talk her into sharing a 1kg/2.2lb pack of Swiss cheese for these but she gently let me down. I was actually more excited for these leftover rolls than anyone really should be!
