It's time for some spring lamb and I've got 5 different lamb recipes using 5 different cuts of lamb. From sticky tamarind glazed lamb ribs and slow cooked Greek lamb with potatoes to fragrant Sri Lankan lamb raan roast or juicy lime and black pepper lamb cutlets and pomegranate lamb shanks there's a recipe for every cut you like!
If you love lamb then I'm begging you to try these sticky lamb ribs. These are perfect for entertaining and have a tangy, sweet tamarind and brown sugar glaze. Plus lamb ribs are an inexpensive cut of lamb!
I don't often cook a leg of lamb as I prefer shoulder as it's more forgiving but this lamb raan roast is worth making. It's a Sri Lankan restaurant style dish that comes from the sadly departed Indu restaurant. It is served with lunu miris, a mix of onions and chilli and mint chutney - heaven!
I still get messages about this Greek lamb and lemon potatoes. The lamb is fall apart tender and the lemon potatoes are the only accompaniment you'll need!
I make these lime and black pepper lamb cutlets more than I do others, mainly because they're so delicious but also simple. It's one of those dishes that you think, "Is that all?" but when you taste the flavour combo of lime and black pepper you'll make it over and over again.
I absolutely love these pomegranate lamb shanks because the pomegranate molasses balances the rich meat perfectly in the same way that lemon does. It's also a great Spring dinner party dish too and cooks in the slow cooker or instant pot giving you more time to do other things.
