About This Biscoff Rocky Road
Calling all Biscoff fans! This Biscoff Rocky Road makes a wonderful treat or edible Christmas gift. Making Rocky Road is also ridiculously easy, only has a few ingredients and takes less than 10 minutes prep time!
Rocky Road is a no bake slice made up of chocolate, marshmallows, nuts and coconut. It is also highly customisable so you can add your favourite mix-ins and additions to it.
Is rocky road an Australian thing? I think it is! In America it is an ice cream flavour but here it is a sweet treat on its own.
Every year I make a rocky road for my friends and family. Each time the flavour is different and can range from Tiramusu Rocky Road to Smores Rocky Road to the Luxe Rocky Road that started the whole Rocky Road Christmas tradition.
The reason why Rocky Road is such a great Christmas gift is because it is not only delicious but shelf stable and can last for a couple of weeks. Even though I am a savoury lover, I absolutely love Rocky Road because it satisfies my love of crunch.

Ingredients For Biscoff Rocky Road
Caramilk chocolate - Caramilk is caramelised white chocolate. Caramilk is not available in the United States but you can find caramelised white chocolate under the name "Blonde" or Dulcey chocolate. You can also make your own. Bake white chocolate at a low temperature 130C/266F for about 40-45 minutes. Every 5 to 10 minutes stir the chocolate to distribute the heat until it turns a light caramel shade.
Chocolate - you can use white chocolate bits or melts (I prefer bits as they taste better).
Biscoff cookies - The 250g/8.8oz packet of Biscoff bicsuits is perfect.
Ground cinnamon - Just regular ground cinnamon to bring out the Biscoff flavour even more.
Honey macadamias - You'll find these honey toffee macadamias at the supermarket. Having them rolled in honey toffee gives the rocky road even more crunch.
Biscoff spread - We are using crunchy Biscoff spread for the rocky road base and the smooth one to drizzle on top.
Marshmallows - Use white or vanilla and not pink marshmallows.
Salt - This is the secret weapon to get your Biscoff rocky road to really pop (along with the honey macadamias)!
Tips For Making Biscoff Rocky Road
1 - Caramilk and white chocolate burn much easier than milk or dark chocolate because of their higher sugar content so make sure to melt them on a low heat (microwave 40% power).
2 - If you don't have a microwave you can use a double boiler (a bowl sitting over a couple of inches of simmering water) to melt the chocolate and heat the Biscoff spreads. Make sure that the simmering water doesn't touch the bottom of the bowl.
3 - I LOVE salt so I added 3/4 teaspoon of salt to this but start with 1/2 a teaspoon and taste it.
4 - When it comes to cutting the rocky road up, I like to take it out of the fridge half an hour before cutting it just to soften it a little so that it is easier to cut.
5 - You can also use Christmas coloured sprinkles or Christmas themed sprinkles on top!

Step 1 PREPARE - Line a 20x20m or 8x8inch square baking tin with parchment on the base and sides.
Step 2 MELT - Break up the Caramilk chocolate and place in a microwave proof bowl along with white chocolate bits. Melt in the microwave on 40% power (not 100%!) heating in 30 second intervals. Mix well to create a uniform colour. Reserve 3 tablespoons of the chocolate.
Step 3 STIR - Set aside 15 Biscoff cookies and break the rest in half. Then heat the crunchy Biscoff spread in the microwave for 20 seconds on high or until liquid. Stir in the ground cinnamon, broken Biscoff cookies, honey macadamias, liquid crunchy Biscoff spread, marshmallows and salt. Stir well and then scoop into the prepared tin pressing it down. Adhere the remaining 15 Biscoff cookies on top with the reserved chocolate. Melt the smooth Biscoff spread in the microwave (10-15 secs high) and drizzle over the top.
Step 4 SET - Place the Rocky road in the fridge to set. Cut into 16 squares or 4 long logs.
STORAGE: Rocky Road lasts up to 2 weeks in an airtight container at room temperature. It can be frozen for up to 3 months.
Substitution notes:
You can use smooth Biscoff in the actual rocky road too if you don't want to buy two different jars.
If you can't get Caramilk, look for a caramelised white chocolate or "blonde" or Dulcey chocolate. Or just use white chocolate!
Personal Note
I love giving this rocky road to friends, especially ones with sweet tooths. Because it is so quick and easy it's never a problem to whip up a batch and it's also great for Christmas pot lucks too.
This year I reconnected with a friend I haven't seen in a while. A lot of people say that making friends in Sydney is hard and I tend to agree (and I grew up here). I also don't want to let just anyone in my life because I've had bad situations with former friends like a narcissistic former friend who just wanted me to write about her husband's restaurant (as soon as they sold their restaurant, she ghosted me!).
I was shopping on South King Street in Newtown one afternoon and Mr NQN came to pick me up. I got into the car and looked out the window and thought I saw Girl Next Door eating her lunch while walking down the street.
Girl Next Door used to work at a food magazine and that's how we met. I used to go on a lot of food adventures but ever since she got became a celebrant I haven't seen her much. She used to look after Mochi and did a beautiful ceremony for her when she passed. Being a celebrant is a bit of an antisocial job as she was never available on weekends and we just drifted apart. She is also more of a facebook girly and I'm more of an Instagram and TikTok girly so we never saw what each other was up to.
I messaged her to ask if it was her and she confirmed that it was. She explained that she also works part time on King Street. We arranged to have lunch in a couple of weeks time and after that went out to dinner and dessert a few weeks after. And we just fell into this easy contact again and she's great to eat out with because she likes to try new things and is always thinking of the best angles for food!
