This is actually an old fashioned recipe that became viral again when former My Kitchen Rules contestant Ash Davey revived the recipe.

Ingredients For A Kingston Peach Bake

Kingston Peach Bake

Kingston biscuits - Kingstons are an Australian sandwich cookie or biscuit. The cookie part is made with oats and coconut (similar to an ANZAC biscuit) and they have a milk chocolate cream centre and they are deeelicious!

Tinned Peaches - Use either peaches in syrup or juice. If you use peaches in juice, I recommend adding a little sugar just to balance the flavour.

Brown Sugar - Light brown sugar is optional and only needed if you use tinned fruit in juice. Not required for tinned fruit in syrup as it's already sweet!

Salt - Just to balance the sweetness.

Tips For Making A Kingston Peach Bake

1 - Don't have Kingstons? Try other cream filled cookies like Monte Carlo or Shortbread Cream as cream filled cookies will bake to create a sauce. Plain oatmeal cookies will give you a crumble style effect (although they won't give the sauce).

2 - Or make your own Kingstons with my Kingston recipe!

3 - You can also sub the peaches for other tinned fruit like apples, apricots, cherries, plums or pineapple. Apricots are probably the closest flavour profile to peaches. Just make sure that these fruits have a lot of juice or syrup in them, around 400g/14oz juice to every 400g/14oz fruit. It will look like too much juice but the cookies will absorb it all. I tried it with tinned apples and it didn't work without adding extra apple juice.

4 - My favourite cookie fruit flavour combo is Oreo cookies with tinned cherries in syrup! In fact I think this is even better than Kingston Peach bake and gives it a Black Forest style of flavour! I'm not even a big Oreo eater but this combo is SO good.

Ingredients Needed

  • 1 packet/200g/7oz Kingston biscuits/cookies
  • 825g/29oz tin of peach slices in juice or syrup
  • 2 tablespoons brown sugar (optional)
  • 1/4 teaspoon salt (optional)

Step-By-Step Instructions

Kingston Peach Bake

Step 1 - Preheat oven to 180C/350F fan forced or 200C/400F conventional. Place the Kingston biscuits in a baking dish in a flat layer. Pour tinned peaches over the top. If using peaches in juice, sprinkle brown sugar and salt over the top. Bake for 20-25 minutes turning halfway. Stand for 5-10 minutes until it stops bubbling. Serve with vanilla ice cream.

Personal Note

On the opposite side of easy, I was driving in Newtown the other day and the streets there are notoriously narrow. Often cars can't pass each other, one has to wait while the other goes. I finally had found a parking spot but had a car facing me and approaching so I pulled over. But then a car behind me swooped in and grabbed the parking spot within seconds, before I knew what was going on! Oh the rage I felt!

I was so mad about that and I think that rage fuelled me. I came across a ute going the other way down another narrow street. Sometimes it's hard to know who is going first but I thought that I was so I slowly edged forward. Except this ute did at the same time and before we knew it, we had inches between us and the cars on the side.

Normally I would be panicking because we love our car and take care of it but I was already late to meet my friend for dinner and I had to go. And the latent rage fuelled me passing this car. The ute was just staying still not doing anything so I had to go. It wasn't until afterwards that I thought non angry me would never have been able to do that!
