This is seriously delicious! I did not expect this simple tasty hack to be as tasty as it was but Mr NQN and I both loved it. It also reminded me of the puff pastry version of Japanese taiyaki fish.
You can use any ice cream bar that you like-the chocolate coated ones are best because you get the contrast of textures from the cold, soft ice cream and crack of the chocolate. It is one of the easiest ice cream sandwiches you can make.

Ingredients For A Croissant Ice Cream Sandwich
Butter croissants - The better the croissant, the better this will be. Make sure that you're using butter croissants - usually bakeries that do a lot of viennoiserie and pastries will use butter (and you can taste it). But these can be expensive and if you want to use supermarket croissants, just make sure to check the label to see that they use butter.
Chocolate Coated Ice Cream Bars - For some reason this trend took off using Magnum ice cream bars. I tested this out using Magnum Ego bars and Connoisseur Pistachio bars and the stick from the Magnum slipped out a lot easier while with the Connoisseur bar, the stick wouldn't budge and the chocolate shattered to pieces. So Magnum it is I guess!
Tips For Making A Croissant Ice Cream Sandwich
1 - The better the croissant the better this will be. I tried this with bakery croissants and supermarket croissants and the bakery ones were SO good! Some supermarket croissants don't even use butter (check the label!).
2 - Hollow out the croissant while it is cold using the same serrated knife that you sliced off the end with.
3 - Make sure that the croissant is hot and just out of the oven. You can warm the croissant in the airfryer (fastest 3-5 minutes on 180C/350F) or in the oven (5-8 minutes).
4 - Take the ice cream bars out of the freezer when you start baking the croissant. If the ice cream is completely rock hard, then it can be hard to remove the stick.
5 - Can I try this with pain au chocolat? Yes you can! Just slice off a little from the end and then hollow out leaving the chocolate intact.

2 large butter croissants (aka not mini ones) or pain au chocolat
2 Chocolate Coated Ice Cream Bars
Step-By-Step Instructions
Step 1 HEAT - Preheat oven or air fryer to 180C/350F. Cut off the last quarter of each croissant (2 large butter croissants) with a serrated or bread knife. Hollow out some of the centre of each croissant with a knife. Place in the oven and bake for 5-7 minutes or air fryer for 3-5 minutes or until crisp. Leave for a minute or two so that it is cool enough to handle.
Cutting the chocolate from the stick
Step 2 ICE CREAM BAR - Slide an ice cream bar (1 Chocolate Coated Ice Cream Bar per croissant) into each croissant and use a knife to cut the chocolate attaching the stick to the bar. Slowly remove the stick with your finger holding down the ice cream bar and another hand pulling on the stick. Enjoy!
Personal Note
Along with making lots of these Magnum croissants, we had a family emergency this past weekend. It was a Friday afternoon and I was working in my office and Mr NQN was out having meetings. I heard a loud squeal from the other room - the kind of squeal that you hear when you accidentally step on a dog's paw. It was Teddy but nobody was near him.
Then a couple of hours later it happened again. He squealed three times while he was sitting on the bed watching me use the treadmill. I turned around but was baffled about what could be the cause. After I finished my workout it was time for their dinner and I called Teddy and Milo. Teddy didn't respond. He just looked straight ahead as if he had never heard me. Then he ran downstairs and outside and hid in the garden for about 10 minutes. It was dark and he was deep inside the bushes.
No amount of coaxing with his favourite snacks would get Teddy to come in. It was only when Mr NQN came home that he came inside but he ignored Mr NQN and ran straight past him to the front room. It was all very odd. Mr NQN thought that he would take him for a walk but almost immediately came the loud squealing.
We decided that we needed to take him to the emergency vet. I sat in the backseat with him and Milo where he squealed and panted very quickly. The vet did an examination and an ultrasound and sent us home with two types of pain relief. Teddy wasn't interested in food or water and didn't move or sleep for a total of 36 hours (the last time he ate was breakfast on Friday morning). The next day we took him back to the vet and we were very concerned for him especially that he hadn't drunk any water.
Thankfully, and we don't even know how or why, he started to rally and improve. That evening after the second vet visit he started to eat some food and drink some water and then the next day he ate even more and drank more. He improved after that so that he was pretty much back to normal by Monday morning. We never figured out what it was although we are just glad that he is ok!
