These S'mores brownies have the gooey, rich base of brownies plus the toasted marshmallow topping of S'mores all on a Graham cracker crust! This is a rich, layered chocolatey dessert for sweet tooths. With a crunchy Graham cracker base, a gooey, dense brownie and a fluffy toasted marshmallow top this is a delicious version of classic S'mores.
I love S'mores and there's nothing better with a fire going but this is if you want to make it extra.

Ingredients For S'mores Brownies
Graham crackers - These can be hard to find outside of America but if you live near a Filipino store, you can easily find Graham crackers there. I have bought both whole Graham crackers and Graham crumbs at Filipino stores (this is where I bought my Graham crackers). In its place Nice, Scotch Finger, tea biscuits and Biscoff cookies also work well as they are rectangular and can be used to tile. Digestive biscuits are usually the sub for Graham crackers but they are round so they don't line up quite as well as rectangular cookies.
Chocolate chips - We're using dark chocolate chips for the batter and milk chocolate chips for the mix ins to give you the best of both worlds. Make sure to use chocolate bits or chips rather than melts as they contain cocoa butter while melts use vegetable fat. Cocoa butter tastes much better and did you know that candy melts are not technically chocolate as they don't contain cocoa butter?
Butter - Salted butter :)
Sugar - Caster or superfine sugar.
Vanilla - Vanilla bean paste, extract or essence works.
Eggs - Large eggs, at room temperature.
Cake flour - Cake flour can be found at the supermarket and it has a lower protein level than other flours so makes your baked goods softer.
Cocoa powder - Pure cocoa powder, Dutch processed.
Baking powder - To help lighten the cake (check it is still in date if you don't bake often).
Chocolate bar - I used a salted caramel bar but really use your favourite chocolate bar because you can never have too much chocolate!
Marshmallows - Use large vanilla marshmallows. Avoid using marshmallows that are covered in cornflour (like Pascalls).
Tips For Making S'mores Brownies
1 - Line the tray on the base and sides with separate pieces of parchment. After you bake the brownie you will remove the parchment pieces on the sides because they will burn under a grill.
2 - Heat the grill on medium and not high and make sure that the marshmallows are not too close to the grill element or they will burn too quickly. Watch these carefully to check that they are browning nicely. Do not walk away and do other things (I learned that the hard way!). :P
3 - Alternatively, a blowtorch also works!
4 - Place the chocolate pieces on the marshmallow when it is hot out of the grill.
I love S'mores and have made so many different types over the years from Ritz cracker S'mores, Oreo S'mores aka S'moreos and Stroopwafel S'mores. I've also made a no bake S'mores pie, a toasted marshmallow S'mores cake, S'mores ice cream sandwiches and S'mores rocky road!
