If you want to try a beautifully crispy-skinned duck, this recipe is for you. Dry the duck in your fridge for 24 hours uncovered and then roast it for just over an hour like a chicken. I prepare a quick sauce with orange juice and aromatics while it roasts. This simplified method works with duck breasts too if you want dinner for two.

This roasted carrot salad is incredibly delicious and features carrots roasted in a honey orange glaze that doubles as the dressing.
