They're easy to make in a blender or food processor and then gently baked so they are tender and never rubbery. Each one packs around 12g of protein and around 165 calories each are are perfect for breakfast on the go, meal prepping or as an easy savoury snack. If you're looking for a tasty, very easy high protein snack then look no further! These are a dupe of the Starbucks Egg Bites that are a hugely popular high protein low carb gluten free snack. Unfortunately these are no longer available in Australia. But don't worry, they're easy to make-all you need is to put all ingredients in a blender and whizz them together but each muffin packs an enormous 12 grams of protein with around 165 calories per muffin. Compare this to the Starbucks egg bites that have 310 calories and 19g of protein for two!
And the secret to getting these egg bites so high in high protein is: cottage cheese (and eggs)! Anyone that is eating high protein food knows that these two ingredients are the way to upping protein levels in food easily. If you're not a fan of the texture of cottage cheese don't worry, we blend it until it is smooth! It seriously tastes like a quiche but without any cream at all.
The Starbucks version uses Gruyere and Monterey Jack cheeses with bacon but these are very versatile so don't get caught up in buying a specific cheese. I tried this with leftover cheddar as well as grated tasty cheese and it was delicious.
The trick to the egg bites is to sous vide the egg bites or cook them gently in a water bath so that they aren't rubbery in texture.

Ingredients For High Protein Snack Starbucks Egg Bite Dupe
Butter - Use melted butter but I let it set a little so that it sticks to the tin well. You can also use liners.
Bacon or ham - Bacon if you want to make them like the Starbucks egg bites and ham if you want to lower the calories and fat in these (and use up Christmas ham!).
Cottage cheese - Use regular cottage cheese, full fat.
Eggs - Use large eggs (700g eggs)
Cheese - Starbucks uses Monterey jack and gruyere but use any firm strong cheese like cheddar, havarti, Comte, emmenthal, gouda or tasty cheese!
Cornflour - we are using fine cornstarch or cornflour. Can also sub with rice or potato flour.
Vinegar - we use regular white vinegar but any sort of vinegar works here
Hot sauce - use your favourite hot sauce. It adds a little pep but these aren't spicy by any means.
Red Onion - These aren't part of the original Starbucks egg bites but I think it adds so much to these egg bites.
Tips For Making High Protein Snack Starbucks Egg Bite Dupes
1 - Make sure to blend the mixture until very smooth. This removes any sort of lumpiness from the cottage cheese - make sure to pulverise any tiny little lumps.
2 - If you have a new muffin tins with good non stick release you can brush the cavities with butter. I find it is easiest when you let the butter melt and then firm up slightly so that it sticks better to the non stick tin. Brush upwards when brushing butter on the sides.
3 - You can also bake these in muffin papers just so they don't stick to the metal tin. These can also be baked in a silicon muffin tin or a mini silicone muffin tin too although they may take a bit longer to bake as silicon doesn't conduct heat as well.
4 - I find it easiest to run a kettle of water and then pour it into the water bath once it is on the oven rack. Transporting a tray of hot water to the oven can be a bit perilous. When they're ready, just remove the muffin tin and leave the water to cool in the water bath in the oven so that you don't get splashed with hot water.
5 - These egg bite muffins are best served warm or hot. Once cold they will become quite firm so they're good for lunchboxes provided you can heat them once you want to eat them.
6 - Variations: you can make spinach and cheese muffins or make these vegetarian with sauteed mushrooms with cheese or roast pumpkin or sweet potato with cheese. Smoked chicken, cheese and spinach is also really delicious in these if you don't eat bacon or ham!
7 - These egg bites freeze well. Once completely cool, wrap them individually and store in the freezer for 2-3 months. Reheat in the oven, air fryer or microwave from thawed or frozen. For oven: bake at 140C/280F fan forced or 160C/320F conventional for 15-18 mins from frozen or 10 minutes thawed. Microwave for 50-60 seconds.
