Top 5 Picnic Salads

Sometimes you want a salad with body and with heft so you feel satisfied. Dear Reader, this salad is that salad. There's roasted cauliflower, lentils, a garlic yogurt sauce, mint and spices and it's even better the next day! Not only this but it's absolutely delicious too with florets of cauliflower roasted until sweet!

2 - Vegan Soba Salad

Salad but with soba? Haha do you see what I did there? Yup this delicious vegan soba salad transports well and the first time I ate this I ate it for weeks afterwards I enjoyed it so much! I love this salad because it is a meal in itself and if you've got anyone vegan that might be missing out on other parts of your picnic they can have this.

3 - Green Goddess Salad

This Green Goddess Salad is fantastic for parties and gatherings. It's one of those salads where you each grab a corn chip and dig in and it's so deliciously refreshing. This Green Goddess Salad ignited by love for GG salads!

4 - Roast Pumpkin & Feta Salad

Top 5 Picnic Salads

This roasted pumpkin salad is one of my most popular and yet it is so simple. It's cubes of pumpkin roasted until sticky sweet with herbs, feta and honey!

5 - Panzanella Salad

Top 5 Picnic Salads

Panzanella salad is one of those fantastic "leftover" salads using day old bread. I combine summer tomatoes with summer corn for a take on a classic panzanella salad. This salad is best at a picnic so that the tomatoes get a bit of warmth from the sun releasing their flavours. All you have to do is add in the bread at the end and uncover and enjoy.

So tell me Dear Reader, do you have a favourite picnic salad?
