The current BBQ chicken in a bag trend uses a rotisserie chicken and adding rice and other ingredients to making a meal and shaking it up in a bag. My riff on this trend turns a barbecue chicken into 8 Mission style chicken burritos in just 15 minutes prep!
If you've ever visited San Francisco's Mission district you've probably tried Mission burritos. These wildly tasty, enormous burritos are a San Franciscan or American take on Mexican burritos made with jumbo tortillas filled with meat, rice, avocado and beans and then wrapped in foil. It's so delicious and great for a meal as it is filling. I can usually only finish half of one but I try to eat more because it is so damn tasty! You know when your tongue wants more but your stomach is telling you that you're full?
The best thing is that we can make our own Mission style burritos using one rotisserie chicken. Even better, one whole rotisserie chicken makes 8 large, very packed burritos so it's great for a crowd or to feed hungry hordes! If you have hungry teenagers, this recipe is for you.

Ingredients For BBQ Chicken Mission Style Burrito
BBQ or rotisserie chicken - Just a good old chicken from the supermarket!
Tomato and Basil rice pouch - You can also use plain rice or cook the rice yourself. You just need 250g/8.8ozs of cooked rice.
Tomatoes - Fresh tomatoes
Red onion - I prefer using red onion when eating onions raw.
Avocadoes - Make sure avocadoes are ripe as you'll be mashing them up.
Refried beans - Tinned refried beans are perfect here.
Garlic dip - Aka toum. Can be found in the fresh dip aisle at the supermarket and is a fluffy, creamy white garlicky dip.
Cheese - Use grated tasty, cheddar or Monterrey Jack cheeses.
Taco seasoning mix - I like using the Mingle taco seasoning mix as it doesn't contain flour. One packet is more than enough.
Coriander leaves - Optional but adds great flavour.
Lime juice - Fresh or bottled lime juice works here.
Tajin seasoning - A delicious Mexican lime, chilli and salt seasoning powder. Can be found in the spice aisle or Mexican food aisle of the supermarket. Tajin contains salt so you may not need to add salt.
Tortillas - We want Jumbo flour tortillas measuring around 25cm/9.8inches in diameter. I always find tortillas hard to buy online as they never really give you the measurements but look for packs with 6 tortillas weighing 450g/1lb. Tips For Making BBQ Chicken Mission Style Burrito
1 - I use food prep gloves to remove the meat from the chicken as it can be very hot and greasy. Make sure to sort through the chicken for bones after you've pulled the meat off as little bones or white bones can find their way into the mix.
2 - I include both the skin and meat of the chicken and one bbq chicken gives around 800g of meat and skin stripped from the carcass. You can omit the skin if you like (you'll just get less mix to fill the burrito) but it is quite quick to strip a chicken as the meat usually falls off the bone easily. I don't add the stuffing as it would make it less Mission burrito tasting but you do you!
3 - You need jumbo tortillas for these. The largest you can find (see ingredient note above). They also need to be supple so they can wrap around the filling. In SF they usually steam the tortillas to make them pliable and then wrap them.
4 - I also like toasting the burrito in the pan. This does take an extra 6 minutes (2 minutes on low medium heat on each side) but this melts the cheese nicely.
5 - Mix this in a bowl or shake it in the bag, it's up to you! A whole chicken is a bit large to shake in the bag so I usually mix it in an extra large bowl.
6 - This recipe can easily be halved. If you halve the chicken cut it halfway down the centre so that you get both white and dark meat.
7 - Mission style burritos are soft in texture. Add some crushed doritos or crispy onions if you want to add crunch to your burrito.
