Few things are as comforting as a steaming (or - in one case - chilled) bowl of bean or legume soup: nourishing, easy on the wallet and absolutely delicious. Here are five simple, economical recipes I keep coming back to - a white bean, spinach and chorizo soup; a spiced Egyptian red lentil soup; hearty Tuscan ribollita; Persian Ash Reshteh; and a 5-minute chilled white bean and yoghurt soup for warm days.
1 - White Bean, Spinach and Chorizo Soup
This velvety, creamy soup gets its lovely texture from the pureed spinach and white beans. Add some chorizo slices and you've got a hearty, delicious soup!
2 -Egyptian Lentil Soup
This simple Egyptian lentil soup is one of the most popular recipes on my blog. It uses red lentils for a delicious spiced vegetarian soup that is also healthy and easy to make!
3 -Chilled White Bean & Yogurt Soup
If you're in warmer weather then this soup is for you. It literally takes 5 minutes to whip up and is so refreshingly delicious that it may end up in your summer repertoire! It uses white beans as well as cooling yogurt, cucumber and mint.
4 -Ribollita Tuscan Soup
Italian Cucina Povera recipes are some of the tastiest, cleverest ways to use inexpensive ingredients and this ribollita is a prime example. This hearty Tuscan soup is closer to a stew and makes use of leftover vegetable soup and transforms it into a delicious, comforting bowl of warmth.
5 -Persian Ash Reshteh
This Persian Ash or Osh Reshteh is one of my favourite soups. It uses lentils, chickpeas and kidney beans with garlic chives, spinach and noodles. It is then topped with yogurt, onion and mint. It sounds complicated but it really isn't!
