I don't need to tell you it's COLD right now and we've only just started winter (HELP!). To make the chilly season more bearable, I'm leaning on mushroom pasta - think creamy lasagne, pillowy gnocchi, baked Alfredo and a comforting risotto - all utterly delicious and perfect for cosy nights in.
1 - Mushroom & Silverbeet Vegetable Lasagna
I'm starting with one of my favourite lasagnas (and I love lasagna as much as Garfield). This vegetarian lasagne has so much deliciousness from mushrooms and silverbeet that you won't miss the meat. Pinky swear!
2 - Mushroom & Chestnut Gnocchi
Mushrooms and chestnuts are a match made in wintry heaven and this gnocchi is made with chestnut flour and paired with delicious mushrooms and that most magical ingredient: browned butter!
3 - TikTok Mushroom Alfredo Pasta
Do you remember how crazy the world went for Uunifeta pasta? This is my version of mushroom alfredo pasta using baked cream cheese, mushrooms and fettuccine. It's SO good and so perfect for a weeknight dinner!
4 - Mushroom Risotto
Is rice or risotto a pasta? Maybe not but this is too good not to include. If you were lucky enough to get some saffron milk cap mushrooms and stash them in your freezer then this recipe is for you. But even if you have regular mushrooms this is such a delicious, comforting dish with just a hint of blue cheese and truffle butter for added flavour!
5 - Mushroom Lasagna
I'm ending this off with another mushroom lasagna recipe but this one was from Ina Garten and is a tiny, delicious recipe for lasagna that serves 2!
